Michelle your apple rings will be so tasty with red-hots. I like to core apples and fill with butter & red-hots to bake. Gotta love red-hots.

Forgot to say I'm putting up 4 pints chicken broth this morning. Thinking about putting a sprig of fresh rosemary in each jar.

I have read all of this thread and am amazed at what y'all are canning! I have only canned one batch of salsa a couple of years ago, but am going to try to do some of the things y'all have been talking about. Thank all of you for sharing what you are canning and recipes as well. I am looking forward to keeping up with this thread!

Canned 4 pints beef veg soup this morning. Hope to can mushroom chicken broth in the morning then 2 lbs Christmas lima dried beans later in the week.

Nice job everyone. We did another 27 quarts of fresh cider on Sunday. I made 4 gallons of moonshine for everyone to share also. Phew. I also canned up 6 pints of apple rings. I made them with sugar syrup and red hots. Good flavor. Thought I would try them that way first, before I try using a vinegar recipe with them. I hope to dry a couple more batches of apples, but if I don't get that far that is ok too.

Michelle I'm in awe of what all you do while working a full time job. Taking a break from canning today to clean house. Housework does seem to get in the way of what I really want to be doing.

I am thinking of trying my hand at making red beet jelly. Has anyone tried making this? How does it taste? Is it worth making?

I have pickled carrots using a pickled beet recipe that calls for roasting the beets instead of boiling. I like this recipe and the roasted pickled carrots are so good. Best pickled beets I ever made.

A canning poem for you!


Canning Time

The cucumber is dilled.
The chili is chilled.
The canning is done for the season.
By the stove I have toiled
The jars have been boiled.
Good food from the garden's the reason.

It's a comforting feeling,
When I hear the jars sealing,
And each jar is filled to the top.
That sound makes me smile.
Says, It's all been worthwhile.
When I hear all those sealer lids Pop.

All that peeling and chopping,
and constant brow mopping.
Hard work is all part of the bargain.
There's no time to be bored,
And I thank the Dear Lord,
For each blessing that comes from our garden.

Cause when winter comes calling,
And the North winds are squalling,
And we suffer from lack of the sun.
There'll be no lack of food,
To darken our mood.
Cause in August the canning was done.

Okay so I just typed this long post and it disappeared :( Frustrating.

Anyway, I have discovered hunting so I haven't had time for canning lately. Just got some Wild Turkeys and Deer season starts in a month. I did get drawn for a bear tag but haven't seen a bear in a couple of weeks. We'll see how that goes. I have been wanting to start on canning soups, etc. but with my husband out hunting I don't want to be in the middle of canning only to put it on hold because he harvested something that requires a lot of attention. Soooooo :)

Joan, you should! Be encouraged! If I can 'can' anyone can :) It really isn't as scary as it sounds and it is great having your pantry stocked for eating and gifting :)

Michelle, yum! I haven't even picked apples yet! I would like to for Apple Pie Filling and hopefully make some more cider. It's a lot of work for the cider but worth it :)

Sara, I remember you posting about your pickled beets last year. Unfortunately I didn't harvest enough for canning so I just roasted some and froze them :)

Denise, thanks for the smile :)

Andrea, I bet your home smells great! I have heard that Uline still has canning jars and lids. I haven't checked it out myself because I still have some but it's worth a shot :)

Good luck hunting Sharon. Canning soups and the like can wait till hunting season is over. I was able to get 9 lbs. cranberries, but I washed them and put them in the freezer for now. Waiting till my jars empty, and I have more time. Next up is wood cutting season. I call that the last of the harvest season.

Sunday I decided to go ahead and make veg broth with veggies I had on hand, and not to collect bits and pieces in the freezer. It turned out so good - canned 4 pints.

Michelle, thank you! Yes, cranberry season! I was just thinking about that today. I do have some in the freezer so I will probably make some cranberry sauce and cranberry juice. Love cranberries :) Wood cutting is harvesting :) Hope it goes well and safe :)

Back to canning dried beans this morning - 4 pints pintos w/fresh sage.

Sharon you are so right about how handy the veg broth is. Several days ago I made veg soup with one pint each of my home canned veg, chicken, and mushroom broths.

I love making soup out of canned items. So quick and easy. Hows the bean canning going Sara? Your keeping busy as always. Wood harvest is going well. Took two days off this week. Tired but making good progress. This weekend is the youth hunt, so will be keeping close to the house. We know where the grandkids will be hunting so not a problem. The woods are so beautiful this time of year.

Michelle, this morning it's black beans w/fresh cilantro. I don't grow cilantro because it bolts on me so I buy it from Aldi when I want it.

The company I buy heirloom beans from have sold out of my favorites so I can't buy more until next year. There are other supplies but they are high and s&h even higher. I have a lb each of Christmas limas and cranberry beans and that's it until next year. Never thought I would see dried beans in short supply too.
