Thanks for the sweet words, Michelle. Rain in the forecast for most of the week so no canning. I don't can unless I can do it several days in a row. Too much trouble to set up Yellow Rose Cottage for just one batch. And as I have said before dried beans will keep.

Michelle one of the things I like about making any kind of meat broth is I de-fat it so it doesn't add fat to my dish - only flavor and a little goodness. I don't cook ham but my sisters do, and they give me the bones with a little meat/fat left on it.

Hadn't planned on canning this morning but when I woke at 6 a.m. it was cool. Have four pints of eye of the goat dried beans in pressure canner. Have enough beans left for two more pints - will can them when I have beans left over from other batches. So glad I learned about canning no soak dried beans.

Forgive me for being indelicate, but what effect does no-soak beans have on the potential gas problem? I have always heard that soaking beans helps eliminate that.

Judith I can't tell any difference between soak & no-soak. One recipe calls for adding a bay leaf to each jar to relieve that problem. I tried it but couldn't tell a difference. I think it all depends on the kind of bean - some beans seem to be more gassy.

Never heard that Sara! I have a bay tree, and after last night when hubs ate almost all of the baked beans using 3 pints of beans.. Boy Howdy! I'm just sayin! LOL!

I've never heard to put a bay leaf in beans but I always put a couple in any pot of beans I cook just because we like the taste. I used to pick bay laurel leaves when we visited Dad but now that he's gone I'll have to beg them from my daughter. We do have a Grecian bay laurel growing in the backyard planted by birds some years ago but it is a lot milder than our native tree.

you know the old saying.........beans, beans, the musical fruit...... lol We ate up my jars of canned "dry" beans that did not seal. They were very good. I made chili beans also. Yum So glad I gave them a try. Now to throw in a bay leaf. Won't hurt nothing that is for sure. No bay trees here though. Got to buy mine. No canning for me. Did so much early this spring, that I am good. Haying season now, so that will take up my time. Along with a rock picking party today. Worked up a small field, and oats are up, but the rocks are plentiful. Happy Canning

Michelle, rocks is something I don't have to deal with but sure got the weeds and bad insects.

Got 4 pints of midnight black turtle beans in pressure canner. Tomorrow it's back to chicken broth.

This morning I finished up the two batches of beans I canned last week. Two pints of eye of the goat and two pint of midnight black turtle beans in the pressure canner.

As I was carrying the beans out to my Yellow Rose Cottage I looked behind me, and Annie was walking as slow as I was down the three steps off the deck. I didn't teach her to do it but ever since she was a puppy she won't pass me on the stairs. No matter how slow I am she stays behind me.

Canned 4 pints chicken broth this morning. Woke at 4:30 so I was out in my YRC by 5:00. It was already 83 in the cottage by that time. We're under a heat advisory so all my canning will done before 7:00.

Have 4 pints royal corona dried beans in canner. Going to be another hot day so when the beans come out I'm done with being outside.

Sara any idea how many varieties of beans you have canned? I am thinking it is alot! lol No canning going on here lately. We are in a warm spell for the rest of this week. We have also had lots of rain.

Michele just guessing close to a couple of dozen. Have 10 different varieties canned and in my pantry. Probably a half dozen or so that I tried once and didn't like them. There's a half dozen or so beans that have been out of stock that I will order when they come in.

Drained electric water bath canner this morning. With temps in the 90s with heat index 116 some days it's just too hot out in my YRC. I have plenty of canned beans & broths to last me till that first blue norther blows across the Red River into Texas. If I'm given something that has to be canned I'll do it but for the most part I'm staying in and staying cool.
