Drying spearmint today. Heather got me hooked on having alfalfa tea for my afternoon and middle of the night tea so I thought I would add spearmint to it. I have single serve tea bags that I can fill with the dried spearmint and seal with my iron.

I love that you're drinking alfalfa now, Sara! I just had some spearmint with mine this morning :) I use a french press for my tea rather than teabags though.
Right now I'm caught up on drying. I need to get another box of peaches though. We ate all the last box before I was able to dry any.

What does alfalfa tea taste like? I'm drying Chamomile. I made tea last night from fresh picked flowers and added dried( I dry this too) stevia. I'm done with drying herbs. I'll let plants grow awhile.

To me alfalfa tea has a not too sweet grassy taste. I enjoy it without sweeting it.

Tara - do you use your stevia for anything else besides tea? I have some this year and I'm not really sure how to use it. I was going to look into using it instead of sugar for baking but haven't gotten around to it yet. I think Sara's description of alfalfa tea is great. I don't sweeten mine either.
I have some peaches dehydrating right now.

My neighbor gifted me a ton of bananas and I have quite a few of them dehydrating right now. This is my second batch. The kids have eaten all from the first batch! They don't last long in this house.

Lisa, you were right! I did another 5 rows and then stuck them in the fridge in hopes to slow the kids down. So far it has worked lol!

Dried onions come in handy for many recipes and good idea to have the dehydrator out of the house when drying onions or garlic. My dehydrator is in my Yellow Rose College.

I dry my onions on our covered porch. Keep that outside for sure. Going to head out and pick some basil leaves today, once the dew dries and get them drying. It is warm outside, so trying to keep activity to the house.

My basil is not doing well this year - the kittens keep laying on it :( I put some zucchini slices in the dehydrator to see if I could make some "chips". They weren't too bad. I'll add a little salt to the next round.

I have my basil this year in my raised bed, old water tank. But I have to keep wire over top of it to keep the deer out of it. Not sure if they eat basil, but I am not taking any chances.

Drying three packages of store-bought parsley this morning. Filled two trays. Trying to decide if I want to dry a bunch of green onions or use them fresh. I have to the parsley dries to decide. I do like to have dried green onions on hand for soups & stews.

Sounds really good, Heather! Sara, love the ideas! Michelle, I want to try drying some of my onions, too! Doing the drying outside sounds great! I love the smell of onions, but not THAT much!

I dry extra zucchini for making minestrone in the winter. When the trays in my dehydrator are full I put the extra on a window screen in the car. The hot car in the driveway can dry them faster than the dehydrator. My son's chickens are laying more than can be eaten so I'll be drying eggs soon.

Sara it's easy. Just crack the eggs in a bowl, mix up with an egg beater, Cover the screens in the dehydrator with saran wrap and cover with a layer of egg. My dehydrator has four shelves that are about a foot square and I can do a dozen eggs at a time. When they are dry I semi-powder them and put them in plastic bags in the freezer. I use them in baking. My son is going to see how they work as scrambled eggs when he goes backpacking.

Thanks Judith, I'm not a baker and I might eat 6 hard boiled eggs a month so doubt I will try it, but I do find it interesting to know how.

Wow Judith, that is neat. My sister in law will freeze dry her eggs but I never thought of dehydrating them. In the future when we get chickens, I'll have to remember this.
