These days, I'm finishing up drying figs. This has been an excellent harvest this season. The trees I have fruit out twice a year, so I'll have another harvest in late Fall.
I always dry my celery tops. I buy it weekly, so I'm always rotating trays of celery.
One of the best compliments from one of my daughters: "Moma, you smell good...like dirt." |

Have you ever tried making celery salt? Add dried celery leaves to salt of choice; in the amounts you want. I use Kosher salt and go heavy on adding the celery leaves.
The leaves can be crumbled in your hands or pushed through a strainer depending on if you want fine or coarse leaves. I have used a blender to make celery powder for those that don't want to see pieces of leaves in their salt. The powder is also good in many dishes.

Roma Tomatoes! I bought 4 Roma tomato plants with no marker by mistake and I have tons of them! so I am drying them! I have already blanched and froze some of them for chili and Spaghetti for this Winter.

Zest of 4 lemons - will freeze the juice in ice-cube trays for morning hot tea
Will use the zest for lemon pepper. What's not needed for that will go in the medicinal herbal tea jar.

Italian prunes.... have two dehydrators full and going now. The smell is heavenly! Tomorrow will be peaches.

Marilyn, you're WAY ahead of us. I don't think we'll have Italian prunes to dry for another month or so. They are my favorite dried fruit!!!! I know the smell you're describing.

Drying first harvest of new sage plant. The other sage plant is for cooking.
Harvested from 1 of 2 basil plants, but will freeze in water in ice trays. Basil is one of the herbs that doesn't dry well.
Hint for those that have not grown herbs before. Harvest in the mornings after dew is dried when the oil is the highest in plant.

I'm with you on the basil Sara, I always put mine in cube trays too. THe past few years, I have overwintered my basil by putting it in a sunny window. It is pretty woody come springtime, but it allows me to have fresh basil in the winter, if only a little. Between that and the ice cube trays, I'm usually set. I need to dehydrate something. Hubs and I gifted ourselves an LEM dehydrator for our anniversary, and it is awesome! We've done jerky, apples, and some tomatoes, but right now I don't have enough to put in it.

Lisa, I have two de-hydrators - both gifted to me. They are small but meet my needs. One has two trays and does have heat controls & fan. The other is a plain Jane round stack kind with 5 trays & no controls.
I look at the nice big ones in catalogues but can't justify the cost just for me but I keep on looking anyway.

Apricot fruit leather and a mixture of greens have kept my dehydrator busy so far. Have a lot of green tomatoes in the garden so am looking forward to them ripening so some can be dries.

I have been drying herbs mostly, hanging some and drying my dehydrator (Sage, thyme, lemon thyme, sage, mint). I have also done some in ice trays (basil, chives and parsley). I dried some garlic, lemons (slices in hot tea are wonderful on a cold winter) tomatoes and apple rings.
Since I am just learning about dehydrating I just have a very simple dehydrator, no settings, just on or off. Gotta start somewhere! :)

I just put some Roma tomatoes in the oven--I cut them in half, drizzle with olive oil, salt, pepper, and this time I added some basil on about half of them--not sure how they'll turn out. I roast them at 250 degrees for about four hours. I've done the same with cherry tomatoes but a tree branch fell on on them and now I don't have any :( I went to the farmer's market on Wednesday evening and got the tomatoes and basil. Cindy
