I can't afford the cost or time to send each one of you a Christmas gift to show how much you mean to me, but maybe this is the next best thing.

Years ago a found a wonderful recipe in Country Woman magazine. It truly is never fail. I've given it the acid test for years, I usually follow directions pretty well, but through busy years and 3 kids I was occasionally distracted, if you know what I mean. In fact this is such a family favorite that I made several batches and boxed them up as wedding favors for my oldest daughter's wedding, at her request.

EASY MICROWAVE CARMELS
1 cup sweet butter
2 1/3 cups (1 pound) brown sugar, firmly packed
1 cup light corn syrup
1 can (14 ounce) sweetened condensed milk
1/8 tsp salt
1 tsp vanilla
1/2 cup chopped walnuts, optional
In a 2 quart microwave-safe pitcher, or very BIG bowl, combine butter, sugar, syrup, milk and salt. Microwave on HIGH for 3-4 minutes, stirring once after about 2 minutes. When butter is melted, stir well.
Microwave on high about 14 minutes (my microwave does it in about 11, so watch out here!) until the mixture reaches 245 degrees(firm ball stage). No stirring is necessary! Remove from microwave, stir in vanilla and walnuts, if using. Allow to stand for 10 minutes, stirring well several times. pour into a buttered 9x13 pan. Refrigerate untl cool. Invert pan. Carefully tap out whole block of candy. Cut into squares. Wrap in waxed paper and store in refrigerator. (Can also freeze). Makes about 2 3/4 pounds.

hint - If its slow coming out of the pan, heat the bottom of the pan slightly with a hairdryer!
