I am making spaghetti sauce to Can, a friend told me I should cook it in a roaster pan in the oven set on 200 all night.
this is to prevent the sauce from scorching. I was wondering if anyone else has ever cooked their sauce this way and does it have to cook all night.

I usually cook mine in a roaster because I can cook it all at one time so it seems to save a bigger mess & time. I cook it for several hours, it just depends on the thickness you want. If I had to guess, I would say I cook at 5-6 hours.

Let me correct the above...I don't put it in the oven but in a turkey roaster, but still set it on a low temp.

Thanks Beth for the information. I am making my sauce today so will cook it that way. I do have a turkey roaster pan so it will work great.

My mom cans the best spaghetti sauce but she's never put it in the oven. We put it up on the stove and once in the hot jars we water bath can for so long. Never had a problem with scorching. She's been canning this way for over 20 years.

I'm a big fan of crockpots for making food to can. I just cook it in the crock pot and then put it on the lowest setting when I start the canning process. That way it stays nice and warm to pack into the hot jars, but I don't have to worry about it burning.
