Oh wow Denise, does that sound good!
Here is a link to a recipe I got from Pioneer Woman's Tasty Kitchen for Chai Tea Concentrate:
http://tastykitchen.com/recipes/drinks/amazing-spiced-chai-concentrate/
I followed the instructions the first time I made it, the second time I omitted the orange peel and black pepper and added a split vanilla bean. This is great iced or hot :)

Hi everyone! I have been working on a bit of fall preparations the past two days in each of the categories here and wish to share some fun with you. Yesterday , I made a recipe up of Buckwheat pancake mix. The earthy flavor of buckwheat reminds me of fall and we used to have buckwheat pancakes growing up as it was a favorite of my Dad.
I started with the purchase of roasted buckwheat groats:
Next, I ground them with my grain grinder.
Then I created a pancake mix with the following recipe>
I alose used Sharon's recipe( Calicogirl) for Fall Spice baking mix;
And created these delicious pancakes!
Last night, I also made one of my favorite dishes: Baked Apples in my apple baker!
So simple to do and always delicious !
Finished off with a mug of my homemade coffee blend: Warm Apple Pie!
So I am off and running after returning from my trip for getting geared up for fall!! |

Winnie! What a wonderful post! LOVE IT! Thank you so much for sharing - ESPECIALLY the pictures!!! Will you please share your pancake mix recipe and the recipe for the Warm Apple Pie coffee blend?! Oh my gosh - sounds terrific!!!
Girls - do you dry your own orange peel, or do you purchase it? Sharon - the only thing I haven't added to my own spice recipe is the orange peel, but I think I'd really REALLY love it!
Thanks so much! What a great way to start a Saturday!!!

Nini, Here is the pancake recipe from a photo that I took. Note, I used the fall spice mix instead of just plain cinnamon which is listed. These pancakes are delicate and crumbly so be prepared for a different texture. I loved the change and with maple syrup and bacon, they are delicious!
You can purchase both kinds of flours in health food stores in the bins section where you get the amount that you want. I also buy dried orange peel at health food stores where they sell bulk spices in jars and you purchase the amount that you want.
My coffee mixture is a blend of the following: 1 part dark roast, 2 parts regular, 1 part French Vanilla, and 3 parts Dunkin Donuts Cinnamon Spice. I love to make it this time of year and often use it in my MJF swaps.
Enjoy!

Thank you Denise! That sounds wonderful!
Winnie, you go girl! I love Buckwheat pancakes, I wish my honey did, he is the pancake make in our home. Great photos, thanks for sharing :)
Nini, I have both purchased dried orange peel and dried it myself. Just make sure you don't use the pith if you do it yourself :)

Nini,
Just wanted to let you know that your roast chicken is on the menu for tonight. It smells wonderful! Looks tasty too! Has about another half hour to go. I did put my vegetables in after the first hour mark. Steaming fresh green beans and yellow squash to go with it. Love my veggies!
hugs,

I don't have a pic, but this is just yummy! This year, I'll be freezer bagging it in small sandwich bags so that we have it all winter long! SO divine on toast, or since I'm allergic to wheat, nut thins. We had some on vanilla ice cream and just about died of bliss LOL! I had to tinker with it and add part Splenda due to Drew's diabetes. Make some, you'll wish you'd made more
Pumpkin Butter
Ingredients:
3 1/2 cups pumpkin puree 2 tsp vanilla extract 3/4 cup apple cider 1 cup packed brown sugar 2-3 tsp cinnamon 1-2 tsp pumpkin pie spice (to taste)
Directions:
Combine pureed pumpkin, vanilla, apple cider, spices, cinnamon and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 - 40 minutes or until thickened. Stir frequently. Adjust spices to your taste.

So happy to hear that someone else renders lard. I have a rough time finding it in my metropolitan area, but I do find it. I just can't ask for any during the fall. Our local butcher uses it for deer meat. Every fall I tried to get some for making mincemeat and to have for baking as lard. I went to my butcher two months ago and got all I needed. I rendered it and froze most of it.

I'm heading into the kitchen now to make up some Spice Bars with chocolate chips. I'll substitute the spices called for and use this Baking spice mix. It's my kind of spices. You all can come over to sample these bars. I have lots of coffee. Just don't mind a little bit of dirt!!!!

Hi, Boy! This spice mexture is awesome! I made my camp spice bars for the new Sisters who are coming tomorrow for our first chapter meeting. These cookie bars are now off the map. This spice mixtire made a huge difference in how it tastes. Thank you so much for sharing it with us.

Baking Spice
6 Tablespoons ground cinnamon 1 Tablespoon ground allspice 1 Tablespoon dried orange peel 2 teaspoons ground nutmeg 1 teaspoon ground cloves 1/2 teaspoon ground ginger
1) Combine all ingredients together. I have a coffee grinder just for spices so this is what I used. 2) Store in an airtight container. 3) Use this mix in recipes that call for the ingredients above. 4) If a recipe calls for the above spices, add up all of the measurements and use the same amount in your recipe.
Makes about 1/2 cup
**I use this in my Honey-Pumpkin Pie recipe, pancakes, quick breads and muffins :)

Spiced Country Plum Pie
Pastry for double crust pie: 3 ½ cups halved Italian prune plums, unpeeled (really you can use any firm plum) 2 teaspoons lemon juice 1/2 cup sugar 2 teaspoons quick cooking tapioca 1/2 teaspoon cinnamon 2 teaspoons unsalted butter ¼-1/2 teaspoon coriander
Roll out bottom pastry and fit into 9 inch pie plate. Do not trim. In large bowl, combine plums and lemon juice. In a small bowl, combine sugar, tapioca, cinnamon and coriander. Add sugar mixture to plums and let stand 15 minutes. Spoon plum mixture into pie shell, mounding slightly in the center. Melt butter and drizzle over filling. Roll out pastry top and prepare lattice top if desired. Trim and flute edges. Bake in 425F oven for 15 minutes; reduce heat to 375F and continue baking for 35 minutes or until pastry is golden. Let cool on rack and serve while still warm.

love the recipes, can hardly wait to have a couple days off to try some. I made a cranberry pork roast the other day, delicious. and ready for stuffed acorn squash
Cut acorn squash in half scoop out the seeds place cut side down on a lightly greased cookie sheet add a little water (about 1/2 cup to the cookie sheet) bake in a 350 oven until you can prick the outer skin with a fork turn over place cut apples, nuts, dash of vanilla, tsp of butter, tbsp of brown sugar, dried berries bake until the apples are tender about 15 minutes
yummy
think I will try the baking spice mix above and add a dash of that

I LOVE pumpkin butter! This is easy to make and yummy still warm on toast, pancakes and sliced apples! My sweetie pie is diabetic so that I have to swap out some of the sugar for artificial sweeteners. I don't think it's as good but it's still delish It tastes like autumn!
Pumpkin Butter
Ingredients:
3 1/2 cups pumpkin puree, or 1 (29 ounce) can (not pumpkin pie filling)the pure pumpkin puree 2 tsp vanilla extract 3/4 cup apple cider or juice (cider is best) 1 cup packed brown sugar 2 tsp cinnamon (less or more to taste) 1-2 tsp pumpkin pie spice (to taste)
Directions:
Combine pureed pumpkin, vanilla, apple juice, spices, cinnamon and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 - 40 minutes or until thickened. Stir frequently. Adjust spices to your taste.
Enjoy!
