Our old canner needed a new gasket, so we bought a new 23 qt canner at Rural King. No matter what I do I can not get it to "hold" anywhere below 16-17#. We tried venting, lowering temp, ect.... Do you think it will be ok to can at that? My beans are going to go bad and I already lost a batch this year for fear of not being properly processed in the old canner.

I wouldn't adjust the recipe. It is always the safest to use a tested recipe and stick to it! Take your canner to your extension office to get tested even though it is new it should be tested before using. Also the extension office should be able to help you figure out why it won't hold pressure. The extension is a great resource!If they don't have the answers they will be able to refer you to someone who can help you.
