Has anyone ever made jelly from the privet flowers? I jsut thought, since the bees are all over that bush, that making jelly from the flowers would be good. So I made some juice from the flowers last week and made jelly today. It smelled amazing while it was boiling. And tastes pretty darn good.

What I am wondering is, if people are allergic to privet, should they eat the jelly? Would it harm them in any way? Should I be concerned about this? I'm sure it's full of the pollen from the flowers. I just don't know if I should make a warning sign at the market or something.

Just wondering and any advice would be great. Thanks.

Wow, that sounds good Kris! I don't know how allergic people may be, but you could always have a small sign stating that if someone deals with allergies, they may want to be careful with floral jams and jellies. Or set out samples :)
