I am in the process of starting a homemade ice cream business. I am able to use the commercial kitchen owned by the company that I work for so that is a plus, but I am running into legal trouble because I want to add value to the resources that I already have by using our cow's milk to produce the product. The department of ag says that this milk would have to be pasteurized at a dairy in a vat pasteurizer which I do not have...Do any of you have prior experience with this?? Any advice would be wonderful!

Could you get the cooperation of a dairy or cheese making company to process your milk? I would think a vat pasteurizer would be very expensive, but is there a smaller less commercial alternative?
Many dairy supply sites sell used and rebuilt equipment. I found a couple with a simple search. dairyheritage.com schiercompany.com
