So last fall we all harvested, processed and put up our produce for the year. But now, what do you do with it? Let's share recipes because sometimes I want something more than a jar of carrot heated.

Tell us what you are using from your root cellar or freezer.

Beets:

I'm trying this tonight from About.com

Gingered Beets with raisins

1 can sliced beets
3 tbls sugar
2 tsp cornstarch
1/2 tsp ground ginger
1/4 tsp salt
2 tsp lemon juice
1/4 cup raisins
2 tbls butter

Drain beets, reserve 3/4 cup liquid. In saucepan, combine sugar, cornstarch, ginger, and salt. Blend in reserved liquid and lemon juice. Add raisins. Cook over medium heat, stirring until thickened. Add butter and beets. Simmer until heated through, about 5 to 10 minutes.

one of my fav's is, canned fruit, and homemade vanilla ice cream in the winter, it is great at getting rid of the overcast blues...of course pies also...as far as veggys go, stews/soups/pot pies/shepards pie...drain and dry almost any veggy and bread, then deep fry...

So I adjusted the recipe a bit. I only used 1 tbls sugar and I used arrowroot powder instead of cornstarch. Not too bad.
