Hey gals,

Years ago I made a "Mexican casserole" that was basically browned hamburger, onion, rice, and spicy tomatoes, topped with cornbread. I would like to re-vamp it a little, maybe leave out the rice, substitute black beans...or possibly some kind of pasta? Anyone have a recipe or suggestions that would help me make a "one skillet meal" along these lines?

Appreciate your ideas!

Used to make Chili Upside Down Pie. What went in depended on what I had on hand. Black Beans or kidney beans, corn or hominy, sometimes ground meat sometimes no meat, onions, tomatoes, chile like seasonings along with some garlic and oregano. Cooked for a few minutes to thicken up and then corn bread poured on top and into the oven. When done run a knife around the cornbread and flip over onto a plate. It is one of my daughter's favorite but since shes not at home to ask for it haven't made it in awhile.

How about this:
Chicken Enchilada Skillet

12 corn tortillas torn into bite sized pieces
3 cups shredded cooked chicken (3 cups=about 12oz)
1 can (10oz) diced tomatoes with green chilis --I think Ro8Tel makes a mix
1 can (10oz) red enchilada sauce
1 can (8oz) tomato sauce
1 cup shredded cheddar and jack cheese



Spray your skillet.with cooking spray (or whatever you would use)
add tortilla pieces and chicken, mix well cook over medium heat 5 minutes or until hot
Pour undrained tomatoes and enchilada and tomato sauces over chicken mixture in skillet. Mix well.
Sprinkle1/2 cup cheese over mixture. Cover and cook 5 minutes or until hot. Stirring occasionally.
Sprinkle with remaining cheese and serve---right now. 6 servings

It is very good and one could adjust it anyway one wanted. Enjoy.

I make a beef and cabbage dish that's done in an iron skillet,I don't have a specific recipe but I chop up a cabbage and allow it to steam semi-soft then I brown some ground beef in bacon grease in a 12 inch iron skillet with onion,garlic,salt and pepper then I add the cabbage and a good amount of sour cream,seasoning it to taste,top it with some shredded cheese then put it in the oven to bake until bubbly.
I've always cooked in my old cast iron pans from my Grandma,they're the only things that survived our house fire so I know they'll be here long after I'm gone so you can't do any better than investing in good cast iron skillets!

Hey Gals, thanks for the recipes!
My hubby and I both have good old cast iron skillets and dutch ovens that have been passed down through our families, and that's pretty much all we cook in! His cherished favorite is lovingly called "Granny's skillet", and we use it almost every night!

Nancy,

I am so thrilled that I cought your post about the "Mexican Casserole."
About two years ago Hubby and I were eating at the Ponderosa Steak House in Portland Indiana. They had this on their buffet line. I thought I would remember all the ingredients when it came time to try and make it. Unfortunately my wrinkled brain let me down. Everything you mentioned sounds exactly how I remembered it. I loved the cornbread topping. If you would not mind, would you please send the recipe to me via e-mail? I would love to surpise my hubby and make this soon.
