Hi Kristina, I have a recipe I've made a few times and it's really good. Let's see if I can remember it: 3 tablespoons honey, 3 tablespoons brown sugar. Bring to a boil for 5 minutes, an extra minute is even better. Add 1 cup toasted sesame seeds and stir well. Put this mixture on a large piece of parchment paper you have laid out earlier, and top with another piece. Working fairly quick, roll out with rolling pin until quite thin. I then scored this into cracker size, and broke apart when cooled. Give it a try, hope you like it. |

Hi Kristina, Here is another recipe for Sesame Crackers you might like to try.
1 c whole wheat flour 1/4 c buttermilk or plain yogurt 1 c unbleached flour 1 tbsp. butter 1 tsp. salt 2 tbsp. sesame seeds 1 1/2 tsp. baking powder About 2/3 cup ice water
In mixing bowl, stir together the flours, salt and baking powder. Stir in the buttermilk. Heat butter in frying pan and add sesame seeds; toast untill golden. Add sesame seeds to flour mixture. Toss in the ice water; mix until dough forms, them knead slightly to make dough hold together. Lightly grease 2 baking sheets. Divide dough in half. Flatten each slightly, them place each on a baking sheet. Roll out right on the sheets to 1/8" thickness. Cut into 2" squares. Preheat oven to 350 degrees. Bake 10 min. or until lightly brown. Cool on rack: they get crisper as they cool.
I use a jelly roll pan turned upside down so I don't have any rim to contend with.
