I have taken on a 28 day challenge to eat Vegan and I need to be Gluten Free. I am looking for any recipes or brands that you can suggest. I may have bitten off more then I can chew. Help Please.....

We will sometimes eat "Fantastic Foods" they have all kinds of bean mixes and many are vegan approved.

My dh and I have been vegan for a year now and have never felt better. I do most cooking from scratch but we don't have to stay away from gluten so I fear I won't be much help. But I find a lot of good, good recipes on Vegandad.com and Veganzombie.com as well. "Ultragel" is a thickener that is corn based and works hot or cold and could be used for gravies or whatever. We love to fix beans and rice. Oh and if you take extra firm tofu slice it quite thin fry it till crisp then put a mixture of low salt soy sauce and liquid smoke and continue to cook it till absorbed you have the best bacon which is what I use in the beans and rice. Really good stuff.

Our family was vegetarian for 9 years and the latter 3 of that we were vegan. There are several products like the 'Fantastic Foods' that Emily mentioned. It can get expensive if you're having to feed a family.

I ended up making everything from scratch....rice and beans, potatoe based casseroles, soups, rice and beans, homemade breads, hummus, rice and beans, (ha ha.....lots of rice and beans!) Plus, tons of fresh fruits, veggies and salads.



One of the best compliments from one of my daughters: "Moma, you smell good...like dirt."

Good Morning, I have been Vegan since the 1st. I found it kinda of hard over the weekend as I was at a conference and the hotel we stayed at only had salads or onion rings on the menu. I love salads but to live on them for a whole weekend. UGH!!!! Spent Monday cooking all day so that I can just grab and go. What I miss most is poached eggs and real cream in my coffee. Coconut milk is just not quite the same. No sure I feel any different yet but looking forward to dinner Thursday when I will be making marinaded portabella mushrooms with fresh coleslaw and roasted veggies. Last night was pea soup and can honestly say I did not miss the ham. The other night I made a wonderful enchilada bake with Dyia shredds and Hubby did not even know the difference. LOL
