We just received two dozen duck eggs from a coworker. This is a first for me! How do you farmgirls prefer to use them? Are they good to eat cooked like regular eggs for breakfast, or are they better for baking? Any suggestions are appreciated!

I've heard mostly that they're great for baking, but in reading my newest Bon Appetite magazine, ey are making a name in the culinary world just fried up in a pan. Supposedly they have a very rich taste.

very rich and great for baking, i.e., angelfood cakes, pound cakes, but we love them for scrambled eggs and hard boiled into deviled eggs, yummy...

BAKING BAKING BAKING!!! Try a cake with them ... you will never use chicken eggs again in your cakes! Yum!!!

Thanks for the suggestions. I think we'll definitely be trying them fried, scrambled, deviled, and baked in a cake. I can hardly wait!

Well darn it! There was a mixup with the eggs and we wound up with two dozen chicken eggs! The man who gave them to us said he will make sure to give us a batch of duck eggs next time. I was just a little disappointed when DH brought them home and I opened the lid on the carton. But since I was totally out of any kind of eggs, they were a welcome addition to the fridge anyhow!
