Hi Farmgirls I am hoping one of you out there can help me with this question as I can not find the answer anywhere. My husband loves when I bake him homemade bread, he has been working in AZ for the past few months and went to an Organic Food Store like Whole Foods only smaller in Payson. He brought me home two bags of Organic Whole Wheat Ultra Bread Performer. Now that is all it says on the bag except the name of the store how much weight and price, they make it up themselves and it is in a ziplock bag. Does anyone know what I do with it, I am figuring I probably add it to my bread mixture but I do not know how much or why. Is it for High Altitude perhaps, we live at 9000 feet almost. Anyway, I thought maybe one of our farmgirls might know how I use it, if not I can call the store in Payson. Thanks for any help you can give me.
It may be like "Vital Wheat Gluten" which is added to the dry ingredients of bread. It is supposed to help certain flours especially whole grain ones to make a gluten strand for texture. If I was you I would call the store and see if that is what it is.
