Risk
Acquire

Some thinking, word, and card-game games:
Set
Quiddler
Five Crowns
Mancala
Tripoley
Uno Attack

We love all the ones you all have shared as well. I know we have a ton more in our cupboard that we play, but these are at the top of the list.
