Hello! I want to try brining my turkey this year. Ive never done it and i was wondering if any of you fellow farmgirls had recipes you recomend.

Our brine is

1 1/4 cup kosher salt dissolved into 1 qt. of hot water. Add 4 quarts cold water, 1 cup dark maple syrup, 1 medium onion thinly sliced, 4 cloves garlic crushed, 10 black peppercorns, 5 bay leaves, 4 strips of lemon zest, 2 whole cloves. Let cool to room temperature.

Because we don't have room in the fridge, we put the turkey and the brine in a cooler lined with an unscented garbage bag, then leave that in a cold place (usually our porch). You are supposed to leave it for 24 hours before cooking.

Our comes out great every year!

Hi Amber :)

Here is one my honey and I came up with after experimenting :)

Sometimes we add pure maple syrup too!

Turkey Brine

1 cup coarse Sea Salt
˝ cup Brown Sugar
1 Tablespoon Dried Orange peel
1 Tablespoon Dried Apple Bits
1 Tablespoon Dried Cranberries, finely chopped
2 teaspoons Black peppercorns
˝ teaspoon Thyme
˝ teaspoon Sage
˝ teaspoon Rosemary
1/8 teaspoon Garlic Powder
3 shakes Crushed Red Pepper Flakes

Combine contents of Turkey Brine to one gallon of boiling water.
Cool thoroughly and refrigerate until chilled.
Place thawed turkey, brining mix and an additional gallon of water
Into a large container so that the turkey is submerged.
Keep refrigerated or on ice for 12-24 hours. Before roasting, rinse well with cold water and pat dry.

Amber, we usually have about a 20 pound turkey. As long as the turkey is submerged it shouldn't matter :) Hope this helps!

I fill my turkey roaster with water until I don't dare anymore (with the turkey too). I then add a bunch of salt (about 1 cup) as much garlic as I feel like crushing (I usually don't even bother peeling it), slice up an onion and toss that in. I make sure some of the onion and garlic and brine get inside the cavity too. Then I put the lid on and throw it in the fridge if there is room. Otherwise I make sure there is a safe cool spot to put it. It used to be my laundry room but I've moved so I'll have to find a new spot. :) I just drain and do a basic rinse in the morning. I then roast my turkey. It has always turned out really well. I find the more simple you keep the turkey the better it tastes and the less stressed I am. I'd much rather be worrying about the baking and other menu items than the turkey. :)

i am thinking of doing a brine this year. since it is only DH and myself, i only cook a small turkey or just the breast. i am going to give this a try.

Our family had great success with the brine used by Alton Brown on food network. He did an entire episode of Good Eats about it years ago. We tried it and LOVED it. I'm sure it would be easy to look up on their website.

i came across a DVD of that program and am thinking of using that one. the cranberry dipping sauce sounds good too. glad to know it works.
