Any ideas on what to do with cabbage - I have some really nice large heads in my garden, a lot of them as a matter of fact. . .but I do not have a crock in which to make sauerkraut and I'm wondering if I can somehow preserve this wonderful bounty for later in the year?

Sheila, I make sauerkraut each year with extra cabbage in the Fall. You can find the crocks for that at Ace Hardware stores online or can order them at the store. Sometimes they have them in the stores. My step-by-step tutorial is at my blog. I also dehydrate cabbage to use in soups, etc. I also make stuffed cabbage with a hamburger/spaghetti sauce and rice mixture and flash freeze them and then store them in ziploc bags to bake in the winter.

I have heard you can make kraut right in the ball jars, I think it was from some one on here too. Diana

I saw P. Allen Smith do saurkraut in a jar on one of his shows. I'm sorry I don't remember the recipe, but you might be able to find it on his website. It was so simple, salt vinegar, water in a quart jar. I'm pretty sure he said to process it in water bath, too.

We have done this for years. Pack your jars with cabbage, add 1 teaspoon salt, and fill with water. Put the lid and band on, and keep in a darker place. It will weep, so have the jars in an container. We have never water bathed it. So not sure about that. michele |

I know there were simple instructions as to how to do this without a crock in a past issue of MJF Magazine... It looked super easy! I'll see if I can find it for you. :) Good luck! - Nini

If you have a basement, as we do, you can put them on a shelf and they will keep for months.
