I have been looking for a recipe for ginger snaps forever!! And have not had any success--I mean the kind of ginger snaps that are kind of dry and crispy and thin, do you know what I mean? All the recipes I find or people give me are more ginger sugar type cookies, chewy or thicker or different.

Does anyone on here have a recipe for ginger snaps like I'm looking for?

If your thinking of the really thin, crispy ginger cookies do a search for moravian ginger cookies. Here's the first one that come up and also read the hint at the bottom about cookie sheets without sides http://whatscookingamerica.net/Cookie/MoravianCookie.htm
These cookies are one of my favorites - my daughter works in Winston Salem and sometimes I get the real thing.
Let me know if you try this recipe or if you find another that's really good, my niece would like to try making some too.

I do have a recipe, but I'll have to search for it. It's been a few years since I made them. I'll try to look for it later. I'm up to my eyeballs with canning this week.

I have a recipe that I grabbed online and we love it. It makes the best darn gingersnaps, and they're small and crisp. The only thing I did differently was use all butter instead of shortening, which I think the recipe mentioned and added some candied ginger in addition to the regular ground. Lemme see if I can dig it up...yep, here it is, below.

I hope you enjoy them like we do, Sarah. My little one can't wait until they come out of the oven! Soooo good with milk!

My co-worker compares them to Trader Joes's ginger snaps, which she thinks are the best cookies on the planet. Having never tried them, I can't say, but I do know these aren't around very long in our house.

I bake mine a bit more than they read, but the exterior is really crunchy, Sheila. Like I said, we've never had a complaint in our house, but this is the recipe I've been using for a few years now. I've personally never heard of ginger sugar cookies.
