I love Horseradish so I grew some this year in a big tub. A fellow gardner told me to isolate it or it would take over. My question is, how do I harvest it? I think it is a perennial so how much root do you take? Any help on this topic or recipes would be appreciated :)

I look forward to reading the replies! I too have horseradish - given a few pieces from a friend who's Mom brought it over from Lithuania about 50 years ago. So far it's contained, but I too want to harvest some so it doesn't take over.

Yes Horse radish does take over I dig at the most 3/4 of the crop and scub and peel the root just get all dirt off. Most important do this outside if can, I use my food processor and grid it but it is very strong about makes you ill then I put vingar and salt on it and put in jars and in the frig. It will keep all winter and then I make it creamy to put on table using mayo or mircle whip which ever you prefer. It's great to have on hand. At my sons wedding it stole the show.
