and did they turn out well? I am actually getting quite a few zuchini this year and was entertaining the idea of pickling them.
I was wondering if you all had a recipe that you really liked. Thanks so much

I have done it, my suggestion would be to pickle the younger ones, not the football sized ones, as mine turned out a little "rubbery". They tasted great. I just used a recipe from the Ball Blue book, I think.

I helped a friend a few years back. Sames as Brenda, I think she just used a recipe from the Ball Blue Book. They came out very well.

Thanks so much. Was the recipe for pickled zukes in the ball book or did you actually use a pickle recipe for cucumbers?

I have a Jackie Clay recipe (imagine that?) & they actually turned out better that cuke pickles. They held their form better or something like that. We will have to "catch up" this weekend. Work tomorrow & then Jim & I have to play in Manchester at 5..

I do them every year. I use the ones the size of a pickling cuke and make bread and butter pickles with them...they are awesome!

There was a recipe specifically for zucchini, I think. It has been a few years ago.

Thanks Ladies. I will have to find my ball book. I seemed to have misplaced it. If nothing else I will try to locate the recipes online. I can't believe I misplaced the darn thing. Since I have been taking care of all these puppies and not getting much sleep I seem to be misplacing and forgetting things....lol.

A friend of mine said she did lime pickling with hers but I have never fooled with that before. I have only made pickled beets and pickled peppers. I just didn't want to pickle zukes and come out with mushy stuff. Once again thanks so much.

I made zucchini relish once. It was great, used a bread and butter recipe and everything else was the same as for cukes.

I use the regular cuke recipe for bread and butter pickles and just use small zuchinni instead.

I found my ball books finally. What a relief. I am making as I type the bread and butter recipe to pickle the zukes. I tasted the brine and it taste really good. I am just waiting for the whole mixture to boil and then into the jars they go. I am so excited.........I hope they turn out as well as they did for you ladies.

Well I managed to can about 7 pints and they look good. I guess I will have to wait a few weeks to try them. Not sure how long to let them sit before they are ready to taste. If I find some more zukes today I am going to do it again.
