Can you can cantaloupe like you do, say, peaches? I can't think of a problem with it, as it's about the same consistency, but I don't remember ever seeing it done. Does anybody do this, or know anything about it?
I have never heard of anyone canning cantaloupe. So I can not help you there. I do freeze my extra by making a sorbet. The recipe was in one of my canning books..Kerr or Blue Ball. I run the cantaloupe in the blender. I make a syrup with water and sugar and add orange juice. I mix together and freeze in pint containers. We take them out of the freezer and process in the blender for a slushy...it is great. When my kids were little, they would just take them out of the freezer and eat them out of the container with a spoon like you would an icy. I don't like it if they melt all the way...the texture and taste is not as good as well as eye appealing.
