Can you can cantaloupe like you do, say, peaches? I can't think of a problem with it, as it's about the same consistency, but I don't remember ever seeing it done. Does anybody do this, or know anything about it?

I have never heard of anyone canning cantaloupe. So I can not help you there. I do freeze my extra by making a sorbet. The recipe was in one of my canning books..Kerr or Blue Ball.
I run the cantaloupe in the blender. I make a syrup with water and sugar and add orange juice. I mix together and freeze in pint containers. We take them out of the freezer and process in the blender for a slushy...it is great. When my kids were little, they would just take them out of the freezer and eat them out of the container with a spoon like you would an icy. I don't like it if they melt all the way...the texture and taste is not as good as well as eye appealing.

The only way I've seen cantalope preserved is freezing or making fruit leather in a dehydrator.
