What's the best way to store it? I've got a whole mess of peaches I need to pick off the tree and I wanted to make some leather. I've heard it can get hard in the freezer, should I just put it in a jar???

lay it out flat on saran wrap, roll so it does not touch its self, vacumm seal, and then put in freezer, it will keep for quite awhile that way, oh, and thaw completly before un-rolling...

use good quality ziplock type freezer bags, and push out as much of the air as possible...
