I bought a bag of potatoes today and when I scrubbed them I discovered that 90% of them are green. So are they safe to eat? Is it just an old wives tale that you shouldn't eat green potatoes?

I have been told if you peel them down past the green they are ok.

Yup just take the green off! I don't think you should allow the green peels to be fed to chicken, pigs etc.....either.

The green is caused by chloryphyll, which is not dangerous. BUT if there is green present, then there is also solanine, which is poisonous. Solanine is also present in the plant and especially the berries. When potatoes were first given to Queen Elizabeth I, the plants were cooked out of ignorance, and everybody got sick. So potatoes were not eaten for quite awhile in England, until the word got around about the tubers.

So, yes, peel off all the green, and they're perfectly safe.

But you might consider where you got them. They are kept in brown plastic bags to cut down on the greening, so if they are green, probably they have been around awhile. If it were me, I'd think about that store and look at the potatoes they have in general. But then I usually eat the skins, I dont' like peeling potatoes.

Potatoes that are green are sunburned. Get rid of the green.
