Now that things have started greening up at our new farm we have discovered we have a TON of wild rhubarb. I've been told there is NOTHING you can do with it and its nothing more than a weed. Is this true? Seems like such a waste to have so much of it growing everywhere and not be able to use it for something...

It is definitely rhubarb. I remember back about ten years ago when I didn't know there was a difference and we picked some and made a rhubarb crisp...and threw it all out. Wild rhubarb definitely not the same! But I was just hoping there was SOMETHING we could do with it since we have so much...

Can you post any pics of it? There is a plant called Rumex crispus which is very edible. The stalks are like skinny rhubarb stalks, but they aren't as sour. IT takes much less sugar to cook with this Rumex. However, there are other Rumexes that are edible but not very good. Rumex obtusifolia has a broader leaf and tastes awful.
Be really careful about eating anything you aren't absolutely, positively certain you know what they are.
I will try to take a picture of it tomorrow and post it. Now you've got me thinking...what if its just something we MN people call wild rhubarb...but its something else? hmmmm. Will get a picture when the sun comes up!
