so I bought some beautiful plump local rhubarb for a tart, but I'm unfamiliar cooking with rhubarb and besides sweetener (I'm using agave syrup) are there an other flavorings that go well with rhubarb?

I'm using a favorite almond meal crust, so I was thinking a little ginger? a bit of vanilla? cinnamon?

I just love rhubarb so much! I love to experiment and it really depends on your personal taste. Nutmeg is pretty interesting with Rhubarb. One time I made brownies and then made a rhubarb sauce on the stove served the sauce over the brownie with a scoop of fresh vanilla ice cream and it was wonderful! You could also make a "fresh,cooked" pie where you cook down the rhubarb a bit, add some thickening/jelling agent (like MJ's ChillOver powder) and put that in an almond crust. Then you just chill the pie and serve with homemade ice cream or whipping cream. I've used honey, sugar and brown sugar for sweetening rhubarb and let me see here... I'm just experimenting with sweetening with Stevia but haven't tried it out on rhubarb yet, my plants are just coming up out of the ground! Strawberries, Rhubarb, cinnamon and a dash of allspice was pretty good. This year I want to make rhubarb ice cream. I think it will be pretty good then I will serve it with pound good and a dash of nutmeg or cinnamon on top. I also like making oven baked oatmeal for brunch sometimes and usually I put in chopped apple and raisins but once my rhubarb pops up I'm going to add in some extra brown sugar and add chopped rhubarb macerated in white sugar overnight. I think it will turn out pretty good and a nice change too. One last idea I've had for rhubarb I'd like to try out is making a gingersnap cookie crust for a pie and making a rhubarb pie out of that. If that turns out then I'm going to do a custard bottom and rhubarb on top all inside a gingersnap cookie pie crust. That might be my new thanksgiving desert! Also rhubarb soda is AMAZING!!! A lady at my church makes it she uses ginger ale and rhubarb juice I think but I will have to get the recipe from her. All I know is that is my favorite party "punch" now!

Rhubarb pie, rhubarb crisp. Just add sugar to your liking. I like mine a little tart.
