I just picked my 2 cups and they are steeping! I hope this works, it was kind of an unplanned impulse. I was so excited that the sun came out this afternoon, I had to run straight to the yard after work.

I know its now the 28th...so, yesterday I made my second batch of violet jelly for the year. I'll make the third one tomorrow. I think that will be enough. Also, made one batch of dandelion jelly today. Plenty to give away.

Amie--how did it work out? It's quite easy once you get the hang of it, and I absolutely LOVE the color of the jelly. I recommend the liquid pectin, also--makes a jelly as clear as glass.

Jonni, I have noticed the exact same thing with the liquid pectin! I get consistently clear results every time when making jelly! I also noticed I get a firmer setting jam using liquid pectin. I get good results using powdered but when making jelly I only use liquid!

@Krystle--I use the powdered pectin with jams, but I don't think I'll ever make a batch of jelly without it. I agree, too, about the setting.

I used the powdered pectin because it was what I had. Turned out just fine, I think. I love the color, and the flavor is...interesting. I can't imagine using it on plebian stuff like pb&j, though. It seems to call for some sort of dainty tea cakes. Does anyone have a favorite combination? What's the ideal pastry or whatever to pair with violet jelly?

Amie, I agree with you! I can not use my dainty jellies on "plain old" pb&j either! I do serve it with my homemade crepes and blinis for breakfast. I also have served the jelly with some roasts and also some artisian breads. Plain old loaf bread just couldn't do it for me. I also made a gluten free pound cake which I served some violet jelly with and it was fabulous! I wonder if I could make a scone recipe delicate enough to pair well with the "flower jellies"...

I love the wildflower jellies on plain scones and english muffins. They are so mild flavored that the jelly flavor is not overwhelmed.
