Does anyone have a recipe for pumpkin bread pudding? I am not normally a fan of bread pudding but I had some a local restaurant this week and WOW was it good with pumpkin! Of course, they wouldn't share their "secret recipe" with me!

I think I would just make pumpkin bread and then substitute that for the plain bread in a bread pudding recipe. I think this is something that you can't really go wrong with...and it would probably work with banana bread, cranberry bread...etc. Thanks for the idea! Judy

Oh wow, that's a good idea! I can imagine it served with spiced whipped cream! And of course I make my pumpkin bread and zucchini breads with chocolate chips, so those'd be good in there melting.
Okay, I'm now Officially Ready For Fall. |

They include the recipe and discuss the nutritional value, calories. Sounds like a keeper to me, I'm going to try it tomorrow or Thursday. It's real bread pudding w/ mashed pumpkin "custard"...yum!

Okay, maybe it was a bad idea for me to get involved with MJF and y'all - if this keeps up, I will never lose any weight - I absolutely LOVE pumpkin and ALL the Fall foods - which typically are carbohydrate rich...argh!!! Well, I will just have to increase my activity level so I can enjoy these things. And it's worse when you live alone, cause you are the only one to eat these goodies! This recipe sounds just wonderful, and I can't wait to try it, as well as my idea of using pumpkin bread in a bread pudding recipe. Fall is my favorite time of year! Yum! Judy
