I just started using fresh grated ginger and I've seen a variety of ways that people suggest storing what they don't use. I just peeled off a little bit of the root and grated what was exposed, but I didn't know if it needed to be refrigerated after that, or if I could just leave it to dry out in the open air.

Has anyone had any luck dehydrating ginger?

I don't peel mine and store it in a freezer bag in the freezer :) I also just take out what I need when needed.
