I started my own vanilla extract a couple of months ago. Do you use your orange and lemon extracts a lot, and what do you use them for?

I use them enough that the hassle and expense of buying them isn't worth it for me. I use lemons and oranges in my cooking, so I basically get the peel for free. Vodka is cheap, and the brand I use is gluten free, so I know when I do use the extracts they are safe for me and my family.

Also, I use mine when I'm baking cakes and cookies. You can use it in the batter/dough, and you can use it in the frosting. Also, some people really like the chocolate/orange combination, so you could put the orange in pretty much anything chocolate that calls for vanilla. I also make my own coconut extract (thank you Alton Brown), and have made some really delicious coconut cakes with it over the years. You can see a lot of amazing combinations with extracts on my blog - back in December I did the 25 days of Treats, and the first few days were all about tweaking cookie dough. I've also tweaked brownies. Take a look!

I love this. I made Vanilla extract for the first time this year! I think I will have to try and branch out with lemons and oranges too! Thanks for the inspiration!

Something really pretty for spring...

White, roll-out sugar cookies, with lemon extract (and maybe a drop or 2 of yellow food color). Mix some extract in some regular old white frosting, spread on the cookies and sprinkle with finely grated lemon zest.

It makes such a nice touch to a yellow cake - just a little, in place of the vanilla.

I used to make coconut cakes with white cake mix and coconut extract, also excellent.

It is soooo much cheaper to get beans via eBay! I even forked out for organic ones, and with the amount of vanilla extract I can make as well as other uses, they more than pay for themselves.

I make my vanilla extract in large batches right in the vodka bottle. I will have to check out how you do the lemon and orange.
