I'm looking for more ideas on side dishes to go with a Thai Lime Chicken we made. This last time I made jasmine rice with coconut milk and lime (and tossed in some coconut too).

I would love other dish ideas that you are using with a Thai main dish.

I like to make spring rolls. They are easy and can be gluten free. You can buy rice wraps at the grocery store.

We generally have a mixed veggie type stir fry and/or spring rolls along with the main dish when we have Thai food. Sometimes, we'll do a noodle dish in addition to that, but not always. There are quite a few spring roll recipes online and I usually just pick one that appeals to me although lately we've been using the Moosewood one.

I'm not sure on forum rules, can I post the recipe here? If you do a google search for moosewood spring rolls, it should come up.

You might try basmati rice with a fruit chutney. I'm trying to learn more about foreign dishes.

I LOVE Cilantro Rice! It is just tangy enough to balance a dish liek that.Here is the recipe I use:

Cook rice as usual, with 1 tsp. salt per cup of rice.

For each cup of rice:

2/3 cup cilantro, loosely packed
1/3 cup chopped onion
1/4 cup chopped scalions
1 jalapeno (or to taste)
1 tbsp lime juice
1 tsp olive oil

Puree the above in a blender, add to the cooked rice, stir well.

Wow. I'm sure Kristina loves your ideas, but so do I. Thanks for your rice recipes. Yum. I like edamame and veggie lo mein as side dishes.
