I received my first piece of cast iron cookware for my birthday! My mother ALWAYS cooked with a cast iron skillet. I find myself becoming my mother more and more every day.

I love my cast iron thats all i cook on. We use datch ovens alot. My Nana gave me my first cast iron pan. The pan she gave me was given to her as a wedding gift.She used it for forty years and than gave it to me as a wedding gift. I have been using it for twenty and plan to pass it to my grand daughter one day. Did you know that studies show cooking on cast iron is better for you? |

I have had several items passed down to me and am just now getting around to being serious about using them. I love to rub them with oil to season and watch them in the oven. I also love the way they brown cornbread good and crusty! MJ has lots of good recipies for cooking in cast iron.
Sunrises are wonderous things, nobody should ever miss one. |

This morning I'm looking through recipes to find just the right thing to break in my new cast iron cookware for dinner tonight. Does anyone have any suggestions?

Cast iron skillets make the best pineapple upside down cake. Maybe I'll make one next week after I get paid. HMMMM....

Well I didn't get very adventurous with my skillet last night, because my husband made some onion soup. So, I made the croutons for our soup in the iron skillet, and I'd have to say that those croutons beat my old style oven-baked croutons in flavor, hands down! If I don't use the skillet for anything else, it will be worth its weight in iron for making croutons.

Anything that's greasy, oily, frying type stuff... but if you do something like bacon, don't cook it crispy... don't let anything brown on it that you might have to scrub off.
When seasoning, what happens is the heating of the iron opens up the pores, so when its oiled and then cools, the pores close up and hold onto that oiling, make it non-stick.
I learned about cast iron while doing chuck wagon cook offs. I cook outside often with mine... Took me awhile to "learn" its temperament and learn how to hold onto the seasoning, but one you get the hang of it, you won't cook in anything else.
When cleaning... as bad as you may want to, NEVER use soap. I always clean mine when its still warm... use hot water, and just wipe it out. Dry it good, put it upside down in the oven and then when storing, store with some paper towels or coffee filters to absorb moisture... and if it does rust, it can be brought back... its just work.

Cooking with cast iron is so unique! I love it! Cornbread just isn't cornbread unless cooked in cast iron. Plus the best pan to make a Chicago Deep Dish (in my humble opinion) is cast iron! And I too put it upside down in the oven as well when I season my pans :)Happy Cooking!

I had a cast iron pan that was perfectly seasoned, nothing stuck to it. Unfortunately when the house burned it was lost. I thought maybe I could find it and save it. Oh, I found it - in 3 pieces. Apparently, being heated to around 2500 degrees then showered in ice cold water is NOT a good thing!

It's all good. Our family is safe and things can be replaced. We did lose one kitty. I don't know if he got trapped in the house or got out and took off. He was very old, so I do hope he's in a better place. Miss you, Zeke!
