You could make a chopped vegetable salad! No cooking, easy-peasy, good for you and really, really tasty. Plus, you can use whatever you want in it. I made one for church a month ago and it was gone in no time. It had chopped summer squash, bell pepper, red pepper, yellow pepper, carrots, fennel, jalapeño pepper (not a lot), cucumber, broccoli, cauliflower, tomato, green onions. (I chopped them fairly small) Then, a dressing made with olive oil, balsamic vinegar and garlic, salt and pepper - Voila!! Yum, yum! Of course, the idea came from the MJ Idea Book. Good luck!!
