I'm not canning or freezing much at all this year. Unfortunately, due to last spring freeze in this part of Colorado there is NO fruit . . NONE, NADA! It's unusual and very sad.
AND, my garden as well as many other didn't do all that well either. I have had very little out of my garden.
It's all SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO DISAPPOINTING!!!

Oh, CJ! I'm so sorry! How frustrating!!! :( I have not gotten much canning done this year either. I do have some fruit in the freezer that I intend to get out and can but it probably won't happen until January. This year has been tough with starting new job, new schedule, etc.

What would you have liked to have canned this year that you didn't get to?

Today I'm making crockpot applesauce so for supper it will be pork roast (1 pint home canned); roasted sweet potatoes; Uncle Ben's 90 min brown & wild rice; and applesauce.

Hi CeeJay, I know that is disappointing for you. I had a really good garden this year, put in a newer, bigger one, but haven’t canned much at all as I just haven’t had the time. I used two of the last peppers for dinner last night. Have a few more tomatoes to pick, but have been closing down the garden slowly. Last night we had “one skillet Mac and beef”. Easy and quick, but filling and nourishing. Made homemade pizza the other night to use up tomatoes and basil.

I haven’t made any spiced pears this season! My best friend has two pear trees and she always gives me her pears but I have not had a free moment. Sadly, I may not do any this season.

I am making some crockpot garlic and lemon chicken. I want to do some potatos as well but I'm not sure what kind yet. I'm thinking maybe roasted potatoes. I still have some time to decide!

Not for dinner, but wasn't sure where else to share this:

Put together the "witches hats" that will top half of my Halloween cupcakes for the party this weekend! Took me a bit of effort to get all the supplies together. After a trip to JoAnn's, calling two stores and then two trips to Meijer I had everything! Ugh!

Ended up using crackers dipped in chocolate for the flat part of the hat. Dipped cones in chocolate and rolled in sprinkles. Attached them to crackers with more chocolate. Here is how they look:



I got in a hurry and didn't wipe my hands well enough in between each one so some have traces of chocolate where they shouldn't, but I'm just going to have to let that GO!

I'm making two batches of cupcakes and will do a different design on the 2nd batch. Bought white icing that I'll tint green. The idea is to make them look like these bubbling witches cauldrons:

We did a lot of yummy food over our camping weekend! Highlights were Texas Trash dip, Sausage Corn Chowder and Mississippi Mud Roast - YUM!

I'm pretty sure I had a s'more every night too! lol

Jaime, that sounds delicious! I wish we could go camping one more time but our season here is over.

Last night was Halloween, so I made the traditional “Pumpkin Chili, roasted pumpkin seeds, and pumpkin bread for a group of friends and kids. The pumpkin chili simmered all day in the crock pot and was perfect for a cold evening!

Tonight I am pooped from yesterday but it’s cold and rainy so chicken and dumplings for tonight! I use a combo of two recipes, one being MaryJane’s and another that is from my grandmother....perfection!

What’s on your table?

Everything sounds so yummy especially the homemade potato chips.

I have beef short ribs with red onions and portabella mushrooms in red wine and tomato sauce with my home canned chicken broth braising in the oven. I added two bay leaves from my wee bay tree. Nothing better than fresh herbs.

Oh my goodness Candy, you sound like a girl living on the bounty of the earth! I am so envious! Its been my life-long dream to get as close to possible to setting my table with nothing from a store, and it looks like you are pretty close to that.

It’s our first real frost, so I am thinking something that sticks to one’s ribs. Comfort food to the max. I will do a beef stew with what is on hand: baby potatoes, carrots, winter squash, onion, kale, tomatoes, corn and a bit of red wine to simmer it in.

We ate lunch out on Tuesday at an inn that has been in operation since 1776! I want to try to recreate their potato soup as it was the best I ever had! Their secret was Asiago cheese...

What is on your table, girls? Need ideas for the week to come...

Nicole, your stew sounds tasty and comforting.

One of my sisters just got back from visiting her daughters on Cape Cod and bought me cranberries fresh from the bog. Either today or tomorrow I will cook them with a pint of my canned pork roast, butternut squash, red wine, and sweet potatoes. I may add a dash of cherry brandy. Since the meat is already cooked I will roast the cranberries and veggies before combining with meat.

This week i have made several different kinds of paninis with my panini pan that my husband bought this summer. My favorite is ham with honey mustard, apple, and cheddar. I also made a nice stroganoff. Tonight I am making chicken fajitas as we have not had that in awhile. Need some inspiration...what do you have on your table?

Nicole, fajitas in a iron skillet is a very good thing.

Today is grocery shopping day and red pears are on sale so I'm thinking of making a oven dish with the red pears, sweet potatoes, carrots, onions, fresh sage, and my home canned pork roast.

Thanks Winnie, you would be welcomed. The red pears didn't come in so I'm using sliced Granny Smith and honey crisp apples I found in the marked-down bin for $1.19.
