CeeJay your dinner sounds de-lish.

Nicole, I made scrambled eggs with parmesan cheese for breakfast this morning and added 1/4 t of turmeric to the 3 eggs. I made extra so I could share with the girls (my 3 chickens). Turmeric in egg dishes is one of my favorite ways to use it.

I toped the eggs with diced tomatoes with green chilies. I don't buy salsa because I like the fresher taste of tomatoes with green chilies.

I'm still cooking up what I bought on Wed. Today it's two pkg of thick cut pork chops - 3 chops per pkg. It was a buy one get one for a penny sale. I even managed to find 2 pkgs that were the same price.

I have them in the oven now - 1 chop for supper tonight - the others for the freezer.

3 chops have MaryJane's Indian Blend, my sisters squash pickles & a small piece of un-cured bacon on top.

3 chops with my Tex-Mex blend, blood orange slice and small piece of un- cured bacon on top.

Elk roast in the crockpot with spicy seasoning and garlic in a beer marinade. We were given a little bit of really good elk in payment for some work my hubby did for a guy. We'll probably have potatoes and salad with it!

It's a veggie kind of day today. Cabbage, potato, leeks, & carrots braised in Irish Red Beer with my homemade yellow rice blend seasoning. Turned out really good if I say so myself. Had it for lunch and plenty for tomorrow too.

Been away a bit, as we had a big storm and lighting hit us and fried our wi-fi and internet. Made some good things lately: Danish Curry Meatballs, Beef Enchiladas in a red sauce (yum), lots of chicken and fresh veggies, and Hungarian Goulash. Last Friday friends came over and I made a big batch of pasta with a marinara, homemade with peppers, kale, squash, and carrots, and fresh garlic bread which I tried to eat sparingly as I am trying to lose a few inches.

Tonight is baked chicken with a light Danish Pepper sauce, salad with a lemon vinagrette.

What's on your table?

Yummy, Nicole, everthing sound so flavorful and light! I've been off the grid for awhile, and it's great to be back and see what's cooking in everyone's kitchen. We had a yummy skillet meal last night of sweet potatoes and black beans. Served it over Israeli cous cous with salad on the side. A little touch of cinnamon added a lot to the skillet.

Got a pork roast in the oven with Irish Red Beer, cumin, S&P, and red pepper flakes. Will use it for pulled pork sandwiches and in stir-fries. I ordered a spiral slicer and it should be here next week. Spiral zucchini noodles and pork with a Mid-Eastern or Caribbean sauce sounds good to me.

There's a good article about spiral slicers & recipes in this month's MJF Mag.

Tonight I am making chicken fajitas with my own seasoning, chicken, yellow squash, different colored carrots, onions, peppers, and corn tortillas.

Pizza ala Lidia from PBS.. A potato crust, topped with asparagus, sopresata, tomato, garlic, olive oil, mozzarella and parmesan.
Still in the oven.. drooling.
Nicole, I love your meals. Would like to be able to see some of the Danish recipes. I've never cooked anything like that before.

Bow-tie pasta with 3 Bridges Alfredo/Mushroom sauce and can red Salmon. Added dried tarragon, black pepper, and red pepper flakes.

Sorry girls, I have been away from my cpu because I have had my hands tied with my hubby and daughter both very sick for 3 weeks! Sunday had to take hubby to the emergency doctor but now he is on the upswing (his illness went into his lungs and he got bronchitis). Needless to say we have eaten a lot of homemade chicken soup, with exceptions like St. Patty's when I made corned beef, cabbage, potatoes, and homemade MaryJane's recipe soda bread.

Last night I made fajitas. I have lost 11 pounds since February, so I have tweaked a few things here and there, like swapping huge flour tortillas last night for corn ones.

Family is flying in today, so I will bake a loaf of homemade bread, and some cookies. They only want light stuff when they get here because they are tired. So I am putting together "Nibbles"!

That Potato soup sounds so good, Sara.

Nicole, glad your family is on the mend and enjoy your family.

"Nibbles" one of my favorite things. I haven't given any thought about what to cook today. May just nibble my way through the day.

The other day I made a quart jar of this & that in olive oil ~ feta cheese with Italian seasoning, a small jar of red bell peppers, zucchini, mushrooms, eggplant in olive oil, and a small jar of Italian olives. Talking about this jar of goodies has given me an idea for an early supper. Tomato pappardelle pasta topped with some of the vegetables and seasoned olive oil from the jar.

That sounds good Sara. I think you and I have similar palates, more savory than sweet.
I have taken that sort of tapenade and added to the top of a pizza crust, topped with tomatoes, some good salami or prosciutto, and some parm cheese. One of the best pizzas ever

Tonight we are having Oven Chicken Fajitas! Have the strips of chicken marinating right now :)

Will dump over a pan of bell pepper and onion strips and roast in oven until chicken is done and veggies start to caramelize - SO good!

Sorry I have been away. My inlaws were here for two weeks and I couldn't get a second to get to the computer.

Last night I tried black bean pasta. Honestly it looked like concrete when cooked. Grey food - not so appetizing. I wanted to try it because it is protein instead of carbs and gluten free. It was okay. Topped it with sauce and homemade meatballs I had frozen. Not bad. Fresh shaved romano cheese was a good topper.

Tonight I am making Ree Drummond's frittata from her new cookbook, which someone gave me for my birthday. I am putting potatoes and kale in it.

Funny, CJ, we had pork chops too! I sauteed them in spiced pears I canned last fall, and they were so good. I also made homemade macaroni (Greek) and cheese, and a big, huge tossed green salad with baby lettuces, yellow and pink tomatoes, red onion, carrots, and tossed in a lime olive oil dressing. Scrumptious!

I should never be allowed to grocery shop alone. I buy everything.

Stir-fry with organic chicken and veggies on top of rice :) I love the stir fry sauce recipe, I found it in a Yankee Magazine and it has pure Maple Syrup in it :)
