Rebecca, I don't eat rabbit, but the pulled pork makes my mouth water!

I made a big ol' chicken the other night that lasted through two meals. I used garlic, cinnamon, ginger, nutmeg, paprika, and salt as a spice rub and put it under a clay bowl to cook. It was so juicy and smelled so amazing. The first night, we had roasted potatoes and carrots, the second night was corn on the cob and green beans sauteed in olive oil.

Yesterday we went to "Connecticut's Oldest Inn" for brunch and had a huge ham meal, so last night I made divine deviled eggs, spanokopita, and cheesecake pie. Appetizers and dessert!

Tonight I need something light after yesterday. Ideas???

Last night we had left over homegrown and home cured ham, baked sweet potatoes and home canned yellow snap beans . . very tasty!

I think I am going to make a casserole tonight using leftover ham, some potatoes, cheese, and probably broccoli.... we'll see how it turns out ;)

CJ & Shannon both of your dinners sound yummy.

Pinto beans with radish leaves for seasoning. Boiled wee red potatoes and then flatten to roast with olive oil & rosemary. Cornbread. Got beans & taters ~~ got a Texas feast.

Tonight DH is going to fire up the grill and make a steak! Yay! I'm thinking a big green salad with homemade dressing, since I have a lot of fresh veggies on hand, and some oven baked fries. My favorite recipe is MaryJane's, I think it is in the Outpost book.

I missed not having yummy ham leftovers from Easter, although we had a nice dinner out. Shannon, your casserole sounds like it will be very yummy!

Wednesdays are usually 'meatless' days for us...
so tonight is Matzo Ball & veggie soup nite... and perfect for tonite, since our weather has turned dark & cold and howling windy,(suppose to rain in a wee bit),, luv soup on nites like these.

We had a leg o' lamb for Easter. Shockingly, there weren't a whole lot of leftovers. ;) But there was plenty for lamb sandwiches with hummus, lettuce, tomato, onion, feta cheese and cucumber dressing on homemade Einkorn bread for dinner last night - yum! Tonight, I'm going to use what's left to make Spanish lamb (a spicy, olive-tomato spaghetti-type dish), and then we can say goodbye to lamb until next Easter!

Grace - I haven't had Matzo Ball soup since I was a teenager! I would really love to try your recipe, too! SO good!!!

Last night was homegrown beef burgers with a wee bit of cheese and green chilies and a lovely spinach salad with avocado, onion, tomato, etc.
Tonight, tuna steak however my hubby decides to cook it which is always yummy! Not sure what will go with yet!

I could so go for some burgers! I might make some tomorrow night for dinner. Tonight we are having breakfast for dinner. I'll make a canadian bacon, hash brown, and egg casserole, frozen fruit, and some sausage, with orange juice. Hmmm and the kids are asking for pancakes as well. I might be able to do that as well :)

We had sauteed, seasoned cauliflower and carrots (carrots from our garden) and sliced tomatoes (not from our garden) with our yummy tuna!

Tonight it's pork bits but I'm not sure yet how hubby will prepare them! But it'll all be very tasty. He's an excellent cook!

Oh goodness, such yumminess tonight!

I got a new cookbook called Sheet Pan Meals and tonight I made Swordfish Ratatouille. Roasted onions, mushrooms and peppers in the pan, added some crushed tomatoes and then baked the swordfish on top. Finished the meal with a salad and a baguette. Definitely making this meal again!

Planning ahead for tomorrow. Rotisserie chicken on sale so that means it's easy-does-it chicken & dumplings. Simple pantry dumpling recipe: Bisquick - can milk - can chicken broth with rosemary, thyme, and parsley from garden.

Such delicious meals! Yesterday was our first really good warm day, without wind so we fired up the barbeque and had German sausage, potato salad and garlic bread. Simple but delicious!

Sounds good, CJ! Monday I made pork chops smothered in canned spiced pears. It made the kitchen smell delicious! On the side we had broccoli and corn and cob, frozen from fresh and still tasting like it was just picked! Last night, DH made "Dansk Bouef sandwiches"...Danish open faced hamburgers: Grilled burger patty open faced, stacked with onions, pickeled beets, remoulade from Denmark, tomatoes, and brown gravy.

Tonight I am making a salad with peas, tomatoes, and mixed greens, grilled chicken breasts and sweet potato fries.

Nicole, I like everything that you put on the "Dansk Bouef sandwiches" ~~~ I just never have had them all together. Will have to give it a try.

Yesterday I had roasted eggplant on toasted French bread with herb goat cheese, sun-dried tomatoes in olive oil.

Gosh I am reading these yummy dishes everyone is making and my mouth is watering! I just wish I could have a taste of each one!! There sure is a lot of talent around here. It makes me realize I need to get out of my rut and start getting creative in the kitchen this summer!!

Sara, yum, I love pesto. And artichokes!

I've told y'all before that Monday nights for us is always some type of beans and rice. So, tonight was Cajun Red Beans, Beef Sausage and Rice.

We've had some good meals lately, now that summer is here! For Mother's Day evening (I was taken to lunch) dinner was Shish kabob (sp?). We had yellow grape tomatoes, onions, pineapple chunks, orange bell pepper, and chicken on sticks, grilled. I marinated it first in pineapple juice, maple syrup, apple cider vinegar, garlic, and worcestershire sauce. Served over Jasmine rice. A friend of mine made me a surprise dinner one night of homemade pasta i fagioli soup which was heavenly, and last night I made a family fave: Texas rice and beans with ground beef, tomatoes, peppers, onions and rice. Not sure what is on tonight's menu....
