Hmmmm...thinking the last of the pork roasts I froze earlier in the season with a big, green salad with yellow pear tomatoes and cucumber from the garden. Finish it with a homemade cheesecake...my DH's favorite, he will be thrilled when he gets home!

Homemade Mac n' Cheese, fresh green beans, and because our garden is exploding (YAY!) a big pan of roasted veggies (that includes our first home grown sweet potatoes). The veggies make a great lunch for myself too.

London broil, buttermilk and fresh chive mashed potatoes, green salad. :)

It's really humid here so I am grilling the steak outside instead of turning on the oven.

I am working from home today so I threw together a crockpot chicken dinner! I searched for hours for a recipe that didn't have "cream of something" soup and eventually gave up and decided to wing it! I love the heartier dishes made with creamy soups but try to eat a bit healthier these days.

Thanks, Andrea! Have you tried the Organic versions of the cream of something soups? They work well, and have no preservatives or chemicals.

Tonight we are having leftover lasagna since I baked basically a trough of it!

@Laurie, stuffed bell peppers...must put that on my menu for next week! Haven't made that in awhile.

Hi Nicole! I have tried the organic versions and feel much better about eating those. The meal turned out great, my sweetie put his stamp of approval on it. He said it was like "chicken soup on steroids" haha. I made such a big batch that we are having it again for dinner tonight :)

I made some sweet potato pancakes that I had a recipe for and had never made before. They turned out somewhat bland but the recipe said to serve with sour cream and chutney; I didn't have any sour cream but had some chutney I had bought at Global Foods sometime back. It was pretty good, but next time I'm going to add some spices to the sweet potatoes.

I am making organic spinach-cheese stuffed ravioli, and trying a new recipe: pumpkin sage sauce. Hope it is as good as it sounds!

Missed yesterday. It was my dd's open house at school. Got home late and to a dog who decided to dump the kitchen trash all over my clean house, aaaarrrgh. Last night we at Chicken hot dogs...organic ones my dh bought at Costco. As far as hot dogs go they were okay, I guess. Being the 9/11 anniversary, I am in the need of comfort food! Making a fall pork stew with apples and sweet potatoes. My family loves it. Whatcha got cookin' at your house?

It's the weekend. A pretty one here, which is nice. Anyone cooking anything yummy? I'm going to make a homemade pizza with tomatoes from the garden, fresh basil, and homemade sauce. Want to make homemade bread for tomorrow's breakfast, but will see if I get to it!

It is a stunningly gorgeous fall Sunday here in southwest Colorado and I LOVE IT!
We are doing a "Pumpkin" Roast on the BBQ (it's beef but that was her name . . :D )
And, probably potatoes and green beans to go with, perhaps corn on the cob.

My sister from British Columbia and her hubby are visiting in the area and will be joining us!

I fixed a salad with roasted squash, mushrooms, barley and a balsamic dressing. It's delicious. Will take some for lunch tomorrow.
