Last night it was "get your own dinner" night - ha ha ha! I canned 6 pints and 4 1/2 pints of blueberry jelly - long day.

I just blanched 2 quart bags of tomatoes. I'm going to start dutch oven spaghetti soon, and let it simmer the rest of the day. The side to go with it is Julia Child's braised cucumbers.

We went to our favorite brew pub and pizza place. They have the ABSOLUTE BEST pizza . . . my kids, who live in Phoenix, agree that this is the BEST pizza. It was called "Harvest 'Za" with marinara sauce base with fresh yellow squash, zucchini, portabello mushrooms, red onion, feta cheese, pesto. . . probably some things I'm forgetting. Just so yummy. They are made on thin, crispy crust in a wood fired oven.
House salad with greens from a local farm and pale ale, brewed right there! Outside on the back patio . . . just our very favorite place!
Farmers Market tomorrow so it'll be an early night and early "call time" in the morning!

CJ,
I hope you have good day at the market today!

I am absolutely stumped for tonight's dinner. Hubby brought home another 10 lb. box of blueberries and a box of peaches. I'll be canning jam and jelly, and maybe peaches if I have enough. Peach pie sounds pretty good right now. Ha ha ha!

Made myself a sandwich last night at 8pm. Too tired and busy to cook.

Tonight it's ham bone crock pot soup with garden veggies, and squash cornbread with honey.

Sorry girls, I missed updating the post a couple of days. With a new kitten, and the last few weeks of summer winding down, we are packing lots of fun into each day sun up to sun down before dd goes back to school.

Last night I made peach jam, so dh grilled a steak, made organic fries, and I made a squash casserole with pickings from "Squashzilla".

CJ: your pizza dinner sounded delicious!

Not sure what I will make tonight yet...

I'm canning again today, so I have no clue what to make. It may be "get your own" night.

I am leaning towards broiled salmon with sweet corn. Apple-filled biscuits for dessert to celebrate Ric's new job.

A hook, a book, and a good cup of coffee....

I put a huge crock pot of chile on this morning before leaving for work. Will make a large batch of cornbread with chiles to go with it and a gallon a sweet tea, yummmm. Even though it will be 115 today, the guys will eat chile any time of the year.

Best always

Yum, Kammi...chili and cornbread is what started this whole thread, and I think it sounds yummy anytime, too! Tonight is a quick prep dinner: veggies from my garden and the organic farmers market tossed with fresh basil, organic ravioli, olive oil, lemon and feta cheese. I want to get done quick to do some more canning!

Absolutely no clue for tonight! We did Farmers Market today and it was hot . . . we're pooped! Probably just "grazing"!

Hubby smoked a pork roast, we had fried spietzels, roasted potatoes, apple sauce and sauerkraut with it. Oh yea, home made bread too.

God bless,

I have a shepherd's pie in the oven. It has a butternut squash crust. The recipe is in the fall issue of Herb Quarterly. It's not hard to make but it took forever as I had to chop up all the vegetables.

The other night I made a pork roast and infused it with fresh garlic (by piercing the meat and tucking the cloves in) and fresh rosemary. Sides were fresh new potatoes and squash casserole. Fair food yesterday (Famous County Fair Sliced Beef Bar-b-que). Tonight I am whipping up some chili, as it is cooler at night.

Yesterday my hubby did SPECTACULAR Italian chicken with poblano, carrots, celery, onion and pasta. I made a SPECTACULAR apple crisp which we topped with ice cream. Pair it all with Reisling from Stoney Mesa Winery . . . yummmmmmm!!!

Made a traditional hoppin-john (black-eye peas (fresh) with ham cubes and bacon and mixed with brown rice. Made cornbread in my cast iron skillet. Hubby loved it.

We've been camping, so tonight may be a simple dinner. I'm not sure what the garden has in store for me today. It rained again this morning, so I'm canning more pear jam.

To be honest, I wish I was camping, and eating campfire food. With the rain, I will have to resort with something else. Hmm? Guess I'll look through recipes later.

Tonight's going to be ground chicken burgers with fresh tomatoes from the garden on whole wheat buns. Also put baked beans in the crock pot this morning. They smell heavenly!

Dorinda, sounds yummy! Must make fried chicken soon...

Looking forward to tonight's dinner. Drove up to farmland in New York State and picked up a fresh Organic beef London broil, organic blue potatoes (my favorite) and organic corn...can't wait! Love an all-organic farm!

Tonight I made sloppy joes only to realize I didn't have any bread... or hamburger buns... but I did have tortillas!!! So we had cheese and sloppy joes in a burrito, it was so much better than bread I think I know what we will be having from now on!

Well, our neighbors gave us some garden produce so we had eggplant parmesean and yellow squash/zucchini/leek/poblano cooked together. Topped with parmesean and sharp cheddar and pasta sauce with sliced tomato. Very, VERY YUMMY!

I'm baking a "Spice Rubbed Chicken", pairing it with a tomato salad, and possibly homemade mac n cheese.
Tomorrow's the last day of summer break, any good suggestions for a dinner?

Last night I made a chicken and broccoli casserole but used mozzarella instead of cheddar, and it was very good. Since today is the first day of school, it's tradition for me to make "One Skillet Macaroni and Beef", something my mom made the first day of school from kindergarten on. Now my girl is in fifth grade and it's our tradition, too.
