It's been pretty hot here, so I've been eating light, had fried zucchini tonight as it was free. Plan to go to the farmer's market tomorrow and stock up.

Had our fill of pizza last night and today for lunch. The last little girl from the sleepover last night just went home. I will make a pasta toss with fresh garlic, tomatoes, lemon, herbs, peas, and olive oil.

MMMMmmmm..fresh corn on the cob, barbeque ribs, potatoes, tomatoes, and peppers on the grill, fresh baked bread, and fresh Tuscan melon for dessert. Good eats!!!

Last night, instead of potato salad, I roasted fresh sweet potato fries (homemade) and made a fabulous greek salad with fresh grown lettuce and herbs to go with the meatloaf. Tonight, I will make my family's favorite (again) by request: Chicken fajitas. Think they would get sick of them!

LOL! Oh, Nicole... I get the veggie thing - I'm totally with you... But London Broil and French fries? That's still pretty darned good! YUM!!!

My hubby's "specialty" is boxed mac and cheese mixed with tuna and peas... Ewwww! >>shudder<< BACHELOR food!!! But when it's been one of those busy days when I just can't see my way clear to the stove, I'm grateful to have it (I just wash it down with lots of milk! LOL!).

Last night I made fish chowder in a casserole in the oven - super duper easy and oh-so-YUMMY! It was so funny, though. I served it up with Ritz crackers, my husband's favorite. He took a HUGE stack of them and went to crush them into his bowl, but it backfired - they exploded in his hands like a little bomb and went all over him like snow - he was covered in crackers, head to toe and in every nook and cranny! LOL! I was laughing so hard that it never even occurred to me to take a picture! Dang! That would've definitely been a good one for the memory book! We literally had to vaccuum him clean before he could rise from his seat! LOL! Too funny!

I've been so busy today I didn't have time to do anything special for dinner, so it's hoagie night! Not the healthiest dinner, but the guys like it, so I'm still reigning as Queen of the Kitchen! LOL! :)

@Michele, ooooh, your dinner sounds delicious!

Last night was a wonderful potluck - Farmgirl Sisterhood chapter got together. One member brought a giant salad with all home-grown lettuce, chard, edible flowers, snow peas, beets...so yummy! Another brought a giant pan of homemade organic mac and cheese, I made a chickpea herb salad, blueberry bread, and homebaked bread with jam. For dessert, another farmgirl brought a lemon cake.

Tonight I am making Tex-Mex! Enchiladas and black beans! So yummy!

I made Ricotta cookies yesterday and plan on making ricotta/spinach frittatas tonight. Yum.

I think I will make a heart healthy Easy Turkey Casserole with broccoli from the garden.

Breakfast was a pot of steel cut oats and another ricotta (homemade) frittata with garden goodies and farm fresh eggs. I love making meals that are totally self-sufficient.

Dinner is another pot of green beans/potatoes and bacon (Hubby requested it again), and a pasta dish with garden veggies. I pulled one yellow squash and a zucchini this morning.

Friday I made a homemade garden pizza and salad. Got grossed out - didn't wash the lettuce well and found a ladybug drowning in my dressing. LOL! Saturday we grilled a pork tenderloin and had fresh corn and baked beans. Today is a way-too-busy Sunday, so we are grilling some burgers on the deck. Maybe an ice cream cone for dessert. :)
