Let the grilling season begin! Tonight was grass-fed organic hamburgers on organic buns with lettuce, tomato and onion, with a side of all-natural chicken and sun-dried tomato sausage, and organic baked beans. For dessert organic strawberries and cream. Yum! Tomorrow will be country-style ribs with a green salad, homemade buttermilk dressing, and potatoes.

Tomorrow 5/28 will be smoked brisket, homemade baked beans,macaroni salad, frsh corn on the cob and I justr finished baking a fudge pecan pie.

Since it's Memorial Day I've got chicken simmering in the crockpot with root beer bbq sauce for pulled chicken sandwiches tonight. I'll probably make potato salad as I've had a craving for it. It's in the 90's today so I'm avoiding heating the house as much as possible as well as avoiding being outside. Dessert - we may go down to the custard stand and get a sundae.

Busy, busy day and evening, and it's hot here. We ate so much meat on the grill this weekend, so I am making my meatless garbanzo bean, tomato, feta, and herb salad.

Sorry girls...DD had three days of a dance recital...didn't sit down to the computer.

Tonight we are having a pork roast with fresh rosemary from the garden, homemade macaroni and cheese, and a big, yummy salad. :) It got cool here so I'm turning on the oven...

I haven't been here in a while...lots going on.

Yesterday I grilled chicken, and we made "mock" Wendy's Apple-pecan salads. Some of our lettuce is up.

Tonite is homemade chili, fresh wilted salad from the garden, and an awesome lemon cake with lemon curd between each layer!!! Yummy!

Ice cream! Healthy, really! (NOT! lol) We had a 2 hr staff meeting, so I didn't get home til after 8, and I didn't have anything prepared. And I emailed a friend, so at 9:30, I'm sitting here eating ice cream before bed. I so need to get my butt in gear & make a decent menu plan, or at the very least, freezer meals more often so that I can have something healthy to eat that's quick & easy. That's my plan for next weekend (the 16th/17th).

Last night Violet and I had cereal coated french toast, bacon and fried potatoes. Tonight, my husband is home and I put Asadoval chili pork into the crock pot--it's a recipe that one the blue ribbon at the New Mexico State Fair--and it's AMAZING. I serve mine with soft tortillas, squeeze of lemon, fresh cilantro, some fresh onion, lettuce, and cheese if anyone wants it. A side of spanish rice and we're good to go!

Snacked on just-picked snow peas with hummus as an appetizer, then DH grilled the most mouth-watering burgers with a smoky flavor and fresh lettuce, tomato, and onion. So good. (And so happy I didn't have to cook)!

We had chicken breast rolled up with pepperoni and hot pepper cheese - yum! - along with steamed broccoli. It's my hubby's birthday, but instead of cake we had fresh raspberry pie from the berry farm for dessert! Heavenly! :)

Homemade tortillas using MJF Budget Mix (they are yummy!)

I fixed a flat iron steak, and earlier in the day I had cut up cucumbers, tomatoes, and red onion and let it marinate all day in a bottle of Paul Newmans Itialian dressing. It was soo good.

Can't decide yet...I've got ground beef but I am not sure if I want to do chili and cornbread (it's hot but I would love some chili), meatloaf, or TX Rice and beans. HMmmmmm...decisions, decisions.

Missed last night's date...dd's school hosted an outdoor movie night. For tonight: I have country-style ribs I made from a pork loin marinating to throw on the grill. Making homemade red potato salad and something green. Not sure what yet. :)

I made porcupine meatball stew in the crockpot...wasn't quite what I was expecting; the meatballs are rather bland, and there's no "juice"/sauce. It tastes alright. May have to make a few adjustments. It also wasn't a "real" crock pot recipe, one I just adapted to put in the slow cooker. Oh well. It's food, and it's edible lol & I don't have to do anything now to actually have supper!

Pam, what are Porcupine meatballs? I've had recipes turn out differently in the crock pot, too.

I had a bowl of Grain Berry Toasted Oats with fresh raw goat's milk. The others had leftovers. It was one of those "too hot to cook, to hot to even eat" days. :P
