As it is Sunday, we had our "dinner" in the middle of the day.
Italian style beef with vegetables over pasta . . . made by my hubby.
DELECTABLE!!!
Then some strawberry cheesecake ice cream.
Tonight is "graze".

Monday we had hambone soup. Hubby and I are still under the weather so I didn't even bake an after school snack or cornbread muffins.

They love the soup, so there is very little left. I was hoping for a "leftover" night tonight.

I'll have to be creative tonight. Maybe egg salad served on sliced red peppers. Not sure yet.

@Kristina, hope y'all feel better! I'm not exactly doing my greatest, either, as I'm still battling a major case of poison ivy. Tonight is a one-skillet meal: Texas Rice and Beans!

Poison Ivy - Yikes! That can be awful. Hope your feeling better.

We ended up having frozen veggie burgers, topped with homemade ketchup and home canned slaw - best I could do.

Maybe egg salad tonight.

Just realized my son ate chicken for lunch at school today & thats what I had put down for dinner tonight. :(
He was diganosed with type 1 diabeties this Jan, so I amit I've been spoiling him on the few foods he can still eat without possible prombles later...SO...We'll be going out tonight.

But Iam still going to grill the chicken, cooked in lime & chipotle. We'll just eat tomorrow with rice & corn.

Live simply. So that others may simply live.

Tonight we are having "leftover night"!That means leftover ham and noodle casserole, leftover homemade pizza and leftover chicken cordon bleu casserole! It's all heating up in the oven as we speak! Perfect day for leftovers too!

The 10th was my birthday, so hubby took me out for dinner. I could only eat a very small portion, so I brought the rest home.

Tonight we'll make spaghetti, a veggie and homemade corn muffins. (hopefully dd is up to cooking).

I canned coffee jelly, so the kids can use that on breads now.

Green chili cheesburgers from our beef and without the bun . . SUCH GOOD BEEF!
Baked potato with chopped onion, spicy seasoning and ranch dressing.

Sorry I didn't change the date until now...got called into the doctor to see my poison ivy again as it got worse and is very painful!

Tonight Audrey and I had so much fun rolling out dough and making homemade pizzas...they came out so good. Such fun when she's in kitchen with me.

Tonight . . . finished up that homegrown ground beef into taco type filling but it went on a salad for a taco salad with spinach, kidney beans, onion, pepper, tomato, grated extra sharp cheddar, salsa verde, tri-color tortilla chip pieces and a touch of ranch dressing!
Yep . . 'twas GOOOOOOOOODDDDD!!!

Hi Farmgirls! Hope everyone had a nice Mother's Day!!! Tonight it's hot, it's been a busy day, and I am making another family request. They want my chicken fajitas in the cast iron skillet, with onions and green peppers, chopped fresh tomatoes, salsa, sour cream, lettuce and freshly grated cheddar cheese, wrapped in whole wheat flour tortillas...all organic. :)

My wonderful husband made polish sausage, onion, diced potatoes and green peppers. Sooo good and for mothers day he made me a chocolate cheesecake. He is a wonderful cook.

Last night I made Clean Eating's Tuna melts - YUMMO!

I'm mixing up a batch to take camping. They are so simple to make -mix it up, spread it on, and bake. We have griddles so they should bake up nice over the campfire.

Hi Farmgirls....dinner last night was grilled grass fed beef with organic broccoli and cauliflower, fresh and steamed, organic multigrain garlic bread and organic potato wedges in the oven, served with hubby's homemade bearnaise sauce. A big, splurge-type dinner, but I had gotten good news so we were celebrating at home.

Tonight is an easy, light meal. Grilled chicken sandwiches with lettuce, tomato and onion on buns. What's on your menu? Also, need an idea for something light and quick, for a late-night dinner. Any suggestions? Tomorrow night I will make my garbanzo bean salad.

I have the taste for Cajun Potato's.

You peel potato's. and boil them , after their done drain all water off. Put a liberal amount of butter as long as they are all coated and then sprinkle Tony's Cashere's seasoning on and toss. Yummmmmmmy!
