I wanted something simple and quick so I made a tuna bumstead--tuna salad topped with cheese on a hoagie bun and warmed in the microwave. Simple, but it's satisfying. Cindy

After a whirlwind weekend, I am tidying up the inside of the house before heading outside to do more yard/garden work. Tonight I want simple but yummy, so we are having homemade Chicken Fajitas. I'm making them in my cast iron skillet with peppers and onion, and garnishing them with chopped tomatoes, lettuce, and sour cream (everything is organic). Rolling them up in Trader Joe's whole wheat tortillas.

Tonight: It's pouring down rain and chilly. Making a pork roast with garlic and fresh rosemary, with macaroni and cheese and salad. Maybe dessert tonight...cinnamon rolls? Chocolate chip cookies? Hmmm.....

I caught a sore throat from one of the girls (who is sick). I think we'll have leftovers or make breakfast for dinner - blueberry pancakes, fresh farm eggs, etc.
I finally get to cook for my husband who is alllllways working at night! I'm super excited, and it's quite warm here today, so we're firing up the grill and having grilled halibuts steaks with Chimichurri, grilled asparagus and probably fingerling potatoes.

It's just me, the girl and Doc Martin tonight, so I'm having the rest of the chimichurri sauce over grilled chicken in soft tortillas for a make-do taco night with homemade guacamole and chips.

Your meals sound wonderful. I'm afraid the family will have to make their own dinner tonight.
I woke up with a killer sore throat (worse than yesterday, and I'm out of sage), and a bad cough. My eyes are watering and hurt. Once I used the allergy easer, the eyes got better, but not the sore throat. I'm afraid it is from the virus that my 12 yo got recently.
I'd make soup, but I don't have the ingredients. Hmmm? Maybe the kids could make breakfast for dinner. I have been teaching my 15 yo more dishes to make lately.
We have the Farmer's Market tomorrow, and then Prom pictures. I sure hope I feel up to it. I do have a stash of hot teas.

Prom pictures...awwww! Love to see the kids all dressed up. Yikes - eight more years and it will be my dd's prom (choke)...
Anyway meant to do "one thing" in the garden today and ended up working from 8 am to 2PM! Got lots to do as my Sisterhood Chapter is coming over tomorrow, so tonight is Organic Hot Dogs! ;)
