Taking the night off from cooking, and packing a suitcase instead. I've been taking "off" a lot lately - ha ha ha!

Tonight we are going to have fried chicken--I can see some you squirming-but I do use olive oil, ranch potatoes, carrots, and homemade biscuits. We won't eat till dark, with rain coming in tomorrow and lasting through Saturday we are trying to get a few things done.

@ Sharon, Yes, it is so nice! We had almost eighty degrees today...couldn't believe it. We made the fajitas in the kitchen (they were sooo good) and sat outside on the deck for dinner. It was a treat. Next week is bringing cold wet weather again. :(

I'm leaning towards either herbed salmon, or lime shrimp skewers; either one should work to celebrate Ric's new job! Also, while I'm waiting for him to get home this afternoon, I am going to make mocha cupcakes.

Alyce, congratulations! Dinner sounds like a great celebration!
We've been eating a hodge-podge of leftovers all week. I'm plum out-of-ideas and thankfully, out of leftovers to be inspired by!

Nicole, what's in the freezer? Maybe something to throw in the oven?
It's kind of chilly here today. You're close by, is it for you too?
Pot roast to warm the house and fill it with that yummy smell!

On Sunday "dinner" is our mid-day meal and it was spicy shrimp with sauteed vegetables and garlic quinoa . . . ice cream to top it off.
Tonight, as is typical for Sunday night, it's "grazing" . . . each for their own.
