Hubby brought home take out last night as a nice surprise since he knew I was tired. I had the best dinner last night from an organic restaurant. It was delicious - chicken with lemon, rice, asparagus, tomatoes, and salad, all mixed together. So, I will make my pork roast tonight. Tired today.

Took Saturday night off - took three kiddos to a hotel for a fun night away to swim.

Tonight it's Broccoli and White Bean Mac n' Cheese. A new recipe to try.

"Pumpkin" Burger patties, well seasoned. Before it's gets too crazy, "Pumpkin" was the name of the beef we just butchered and put in the freezer!
Alongside - crunchy spinach salad filled with all kinds of raw veggie goodies and my Western Beans, which are locally grown (by our friends) pintos cooked with all kinds of seasonings, poblano pepper, onion, tomatoes . . etc. YUMMY!!!

Every Sunday is dinner at my in-laws. She cooks, I bring dessert. Steaks and baked potatoes, broccoli and salad. I made almond cookies and just a quick "Bonnie Butter" cake from my old Betty Crocker cookbook. Gotta love Betty!

Well, didn't make the pork roast last night as we ended up eating a big lunch and working in the yard. Had sandwiches for dinner. Have to check the pork roast. Took it out and thawed it in water Saturday. Will have to do the dreaded sniff test. What do y'all think? Will it still be good? I hate, hate, hate to waste food but also don't want us getting sick.

My pork roast was fine. Smothered it in garlic, salt, pepper and fresh rosemary. It smells heavenly. Making broccoli and mac and cheese.

My lil bro (28 years old) grilled hamburgers tonight. The funny thing is, when he was grilling he didn't press them down to keep them in patty form. As they cooked, they kind of raised up into somewhat of a ball form. When he went to flip them, they were rolling all over the grill. Lol! It was pretty entertaining and they turned out great! :)
