I hope this is not too late! Here are a few that sound really good. I was a vegetarian for years, but have little vegan cooking experience.

Thanks so much Ashley. No, you are not too late. I had lots of time to prepare for a vegan dish. I have never cooked Vegan either, but I do make vegetarian dishes on occasion. I still am an omnivore, however have been invited to a potluck where nearly everyone is strict vegan. This will give me time to try a recipe before I take it to share. Thanks again.

I made a potato curry in my crockpot, if this isn't too late. Here is the link: http://vegan.sheknows.com/2010/12/24/vegan-potato-curry

I precooked my potatoes, then made the sauce on the stovetop. Poured sauce over potatoes in crockpot, and gave it a good stir. Left crockpot on low to heat everything through. I am not a curry person, so it was lost on me, but others told me it was delicious.
