Many of the ethnic stores near me have 50 lb. sacks of cabbage for sale. They advertise: Winter Cabbage.

What does one do with 50 lbs. of cabbage? Am I missing out on something? That's a lot of sauerkraut.

You can separate them and freeze them laying down for cabbage rolls.

Make kraut. I just made some the other day. Just chop up a head in the food processor. Then start layering cabbage with salt and pound it down real good to get the juice out. Keep doing that til it's all in the jar. Then make sure it's covered with juice. I put a small glass on top to keep the cabbage covered. Then cover the jar with cheesecloth and set on the counter about 3-4 days. Refrigerater and eat with meals. It's so good and good for you too. And very easy.

You can also put it in soups.

It's pretty good in a tomato based soup with other veggies.

It's also good by itself boiled and lightly salted

Saurkraut (I tried making this and would MUCH rather buy a home made jar or two form somebody else.

Lots of cole slaw
