Hi all,
I need to increase my family's intake of veggies, but I am coming up short on new ideas. My family is a very meat and potatoes kind of family and we are new to eating more healthy, so if anyone has any suggestions for recipes that are KIND OF mainstream, I would be eternally grateful. Have you tried green bean casserole? You can make it with low-fat soup or fat free sour cream...I add cheese and regular onions to mine...

Also, steamed carrots are ALWAYS a win-add some brown sugar (OR brown sugar substitute), butter (Or margarine), and dill...YUM!!

broccoli is always yummy too, with some butter (Or margarine) and spices.

After you steam baby carrots, saute them in butter and add a splash of maple syrup. To this day, I will only eat cauliflower with cheese sauce. Make them eat stew, and you can make slaw delicious with granny smiths, raisins, etc.

My kid eats vegetables with no complaint if it's in yakisoba.

We discovered that roasting radishes with carrots sweetens them up. We love it with herbs tossed on them too. Yum.

My family actually likes pumpkin waffles which is just pancake mix with some canned pumpkin and may e some pumpkin pie spices if I am feeling especially creative. I am also new to sprouting which I either snack on or put in sandwiches. I also find pumpkin bread and zucchini bread go over well too.

Are the kids old enough to "help" in the kitchen?
You might try having them pick a simple recipe that includes veggies and then, you can help them make it.
Try blending extra veggies into pasta or other sauces. Most kids love pizza and spaghetti too.

Carrots-
1. A little chicken broth in the bottom of a pot, carrots, and cinnamon, garlic, onion powder, and onions. Delicious!

2. Carrots, cooked, and then add orange marmalade, salt, etc. yum!

3. carrots, cooked, add maple syrup, brown sugar, cinnamon and all the things you would basically add to sweet potatoes, and then mash. YUM!

We also add carrots to about all our main dishes as my kids like them, shepherd's pie, chicken noodle soup, split pea soup, etc carrots are pretty good in all of them. Same with green beans.

Cauliflower, I love it again in soups! YUM! and Also I really really like sprayed with a bit of oil (you can get your own spray pump from places like Pampered Chef add oil and spray), coated with seasoning-we like mrs dash and some greek seasonings stuff like that, what ever mixes you like, garlic is a big one though we like to make sure is in the mix. And put the temp on the oven as high as you can, 550 or so. Spread the cauliflower out on a pan in a single layer, oh also salt it a bit. And then bake till golden brown. This is soooooo good, almost like popcorn.

Collard Greens-ham hock, a bit of brown sugar, a bit of molasses, a little chicken broth in the crock pot for some hours. YUM! Oh and as a side note we like frozen just as well as fresh and a lot less trouble!

Veggie soup, my favorite is one from Panera Bread. I went to their website and wrote down all the ingredients in theirs, and bought all that stuff, I had never used pearl barley before, but since it was listed I bought it and it cooks up really easy, is cheap and the soup is delicious! I haven't made my own pesto yet, but we like the one at Sam's club (Panera bread tops theirs with a dollop of pesto, so I do too!), surprisingly it's cheaper then the regular stores, and taste just as good if not better. However the one at Panera is pretty good!

Then really I must say most veggies are good just roasted/cooked, and salt and butter added. For instance i've tried a lot of beet recipes, and just boiled, drained and a little salt and butter added is still my favorite. Well besides pickled and added to a salad.

Oh layered salad, one of my favorites since I was a kid! frozen peas (I like the petite or baby ones), lettuce, cucumbers, etc, topped with mayo, cheese and bacon! Doesn't get better then that! lol haha

Zucchini is one of my favorite veggies and it can be added to a lot of things too! It has a sweet taste to me and I just love it.

These are just off the top of my head. I'm sure there's more things we eat and different ways. Just hard to remember every thing at once.

I remember one thing that I like the picture of that my mom used to do, is make meatloaf in a ring shaped pan, or her sister would just form it into a ring shape and then put something that could go in the oven in the middle to help it keep it's shape (something round, like a bowl or such), then steam veggies, cauliflower, broccoli and carrots most often, and put it in the middle of the meatloaf ring, when cooked. It was just about presentation more then "recipe" it was pretty served like that and looked cutesy!

add fresh or frozen broccoli, cauliflower and carrots to homemade mac and cheese. To lower fat intake, use 2% milk and reduced fat cheddar. You can use whole grain mac and top with whole grain saltines (crushed).

I have same problem with my bunch. I found a recipie in a magazine I tried out on Thanksgiving and it was good.I changed a few things. the original called for a bag of frozen veg medley(broccoli,cauliflower andcarrots) can of cream of mushroom soup, cup of mayo and cup of shredded cheddar. Bake 25 min top with french fried green onions bake 10 min. I had frozen broccoli and didnt want to go to the store. I just put it in the crock pot with the mayo and the cheese and some milk. The mayo gives it a different flavor everyone loved.

In the summer when I have an abundance of zucchini. I always make several dozen zucchini pancakes & freeze them. My son (8 yrs old) loves them. I fix regular pancakes then add some shredded zucchini and a little cinnamon & just a dash of sugar. Atleast this way, he is getting an extra serving of veggies each day.

Rachael, if your family is partial to garlic, I find that sauteing just about any vegetable in either olive oil or a little butter with garlic makes my family more likely to eat their veggies. (I usually microwave them first for a couple minutes and then saute them very quickly.) Also, a splash of balsamic vinegar can make green beans taste totally different. A few chopped nuts on top seems to make everyone happy too. Roasting root veggies is pretty awesome too. A few weeks ago I roasted carrots, parsnips and onions in the oven. Just coat them with olive oil and season however you like. Once they get all brown and soft they are really yummy. I even put them warm on salad - and my root vegetable-hating, salad-hating husband ate the whole thing.

I posted this a few weeks ago. It's amazing, and I swear, will make a vege lover out of anyone in your family. My mother who firmly attests to hating cooked carrots and brussel sprouts, and cringes at the thought of an apple, ate 2 helpings, took more home for leftovers and asked for the recipe.

My husband, who is typically a "sometime" veggie person, really loves this veggie soup I make with browned burger. I made it one day because we were snowed in and the power was out so I had to clean out the fridge and it's become his favorite soup I make. Brown the ground beef, drain if needed. Put in stock pot with canned of tomato puree, and then some tomatoe paste for added sweetness. Can add frozen or fresh veggies. Lima, green bean, corn, onion, garlic, potatoes chopped into small, bitesize chunks (I don't peel them), corn added last. Let simmer and season well with s & p.
