And I brined a 21 lb turkey almost 24 hours. I baked it originally at 350 for about an hour to get a nice golden color, and then lowered it to 325 and covered it with foil for about 3 more hours.
That turkey was the JUICIEST turkey I've EVER eaten. And it was SO flavorful. My die hard deep-fried turkey man swore off the deep fried for this bird! He said it was the best he's ever eaten. I will DEFINITELY be making my turkey this way from here on out. :)
