I'm having french toast waffle style :). Meaning I heated up the waffle iron then decided to do french toast instead of waffles & I don't want to wait for it to cool down enough to switch the plates back to the flat side. Sometimes I'm lazy like that lol.

Your meals sound good ladies! I want some :).

It's a toss up between bison burgers with caramelized red onion and Balsamic pork steaks..either way we will have a light green salad and freshly made ciabatta bread. I lovelovelove the cooler temps so that I can return to my lovely little kitchen and cook!

@Leann, I'm coming to your house for dinner! You said the bacon word

Happy Autumn Everyone!

Good ol fashioned beef stew, big chunks of meat that you need to cut smalller to eat, baby potatos from my garden stash, carrots also from the garden , along with red onion, plus of course "DUMPLINS", and spicy bacon green beans...then a big bowl of homemade cherry chocolate ice cream...

Tonight we had broiled chicken breasts (seasoned with salt, pepper, onion powder, and garlic powder), brown rice cooked in beef broth, and green beans. Some of the things that you guys have listed sound so good. It makes my mouth water!

God bless,

We are having Country-style Onion Cream Soup make with onions from the garden and a loaf of homemade Wheat Potato bread.

I sure wish we could get fresh bison burger meat for a reasonable price here. Mmmm..french toast sounds really good right now....guess now I know what's for breakfast tomorrow!

Okay...I'm getting hungry just reading these posts so I better go fix dinner!

Cheers! ~ Marilyn

We just had leftovers. We were trying to clean out the fridge before we leave on a four day vacation to the north woods. My portion of the leftovers was pork with potatoes and carrots. Not bad, I'll say!

Mmmm! Last night, my hubby made pork chops, cheesy mashed taters, and pork n' beans. The chops were from a pig we had processed in March. EXCELLENT.

For dinner (which, down here is lunch), I'm making a tuna/noodle casserole out of my Better Homes and Gardens cookbook. Just trying to use up food we already have. :0)

I was thinking about trying the kale and butternut squash minestrone from Alice Water's Art of Simple Food cookbook. But I forgot to put the beans in to soak last night, so I guess that will have to wait for tomorrow.

Lucky I've got leftovers from last night. We had roast vegetable wraps, which is something I've been making all summer. It's a great way to use up small amounts of vegetables. I roast the vegetables for about 35 minutes at 350 degrees tossed with a little oil and spices. Last night it was half a green pepper, some eggplant cut up into cubes, some leftover cooked green beans, and a head of broccoli. When they come out of the oven, I wrap them up in whole wheat tortilla wraps with a light dab of mayo and some cheese. Delicious and very easy! Baked tofu is a great addition to the veggies, if you've got it.

I think I'll let my husband have the last wrap, and I'll just have some freshly baked whole wheat bread and stewed plums. Just a light supper is enough for me after doing schoolwork at the computer all day.

Roast in the slow cooker, cooked in tomato juice and homemade onion soup mix, along with fried potatoes in garlic butter (trying to use up those tiny potatoes). just the thing after putting in fence posts out on the land this morning, then making applesauce while watching the packer game....(10 quarts or so).

Well, I threw all semblance of 'healthy' out the window tonight as I was just craving some Vitamin O (oil). :-) And so, I made some chicken fried steak with white/pepper gravy, green beans and corn and mashed potatoes. I did have a nice crunch apple for dessert. Does that redeem me?
